Oh man, my favorite! Here's a couple that are easy and taste great!
Chili Cheese Dip
1 can of chili
1 small pkg. of Mexican Velveeta cheese
Put chili in a microwave safe bowl and cube up the Velveeta and put it in the chili. Microwave, stirring occasionally, until chili is hot and cheese is melted. Serve with tortilla chips.
Ultimate 7 Layer Dip
1 can of refried beans
1 tbsp. taco seasoning mix
1 cup of salsa
1 cup of sour cream
1 cup shredded lettuce
1 cup grated cheddar cheese
1/2 cup chopped green onions
2 tbsp. sliced pitted olives
Mix beans and seasoning mix. Spread into bottom of a 9 inch pie plate. Layer remaining ingredients over bean mixture. Refrigerate. Serve with tortilla chips or Frito's.

INGREDIENTS
1 pound ground beef
1 cup diced onion
1 (16 ounce) jar salsa
2 (16 ounce) cans refried beans
2 (4 ounce) cans chopped green chile peppers
1 (2 ounce) can sliced black olives, drained
2 (8 ounce) packages cream cheese, sliced
2 cups shredded Cheddar cheese
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Place ground beef and onions in a large, deep skillet. Cook over medium high heat until onions are soft and ground beef is evenly brown. Remove from heat.
Drain beef and mix in salsa, refried beans, green chile peppers and black olives. Transfer mixture to a 9x13 inch baking dish. Layer with cream cheese slices. Top with Cheddar cheese.
Bake in the preheated oven

This is for tortilla chips
you will need:
1 8oz pkg cream cheese, softned
1 12 oz sour cream
1 lb. ground beef drained
1 pkg taco seasoning
1 large jar chilled salsa
1 8oz bag shredded cheddar cheese
Mix cream cheese and sour cream together, spread in the bottom of a 9x13 pan. Mix your ground beef with the taco seasoning and salsa, put that in next, then add the cheese on top. Voila! Chip Dip, it is very good...you can also add some olives if ya want.

Pumpkin & Cumin Dip
1 Small Pumpkin
1 teaspoon ground cumin
1 teaspoon salt
1 tablespoon oil
2 tadlespoons cruncky peanut butter
1/2 teaspoon chilli powder (optional)
Freshly ground black pepper to taste
Simply skin and bake one small pumpkin. Next mix together into a paste all other ingredients and if you like it hot half teaspoon of chilli powder. Once the pumpkin is cooked mash the flesh together with the paste until well combined and then refrigerate until ready to serve. Season with fresh ground black pepper to taste and serve with crackers or crisps

This isn't a "from scratch" recipe but always a favorite.... just mix one envelope of onion soup mix (Liptons brand or any other brand) and one 8 oz. container of sour cream.
