I fry the wings and toss them after in store bought wing sauce.

4 packs of wings, wash and cut off excess fat but not skin and salt and pepper them.

You will need three large bowls.

In the first bowl, beat together 4-5 eggs and a few sprinkles of hot sauce. Being from Louisiana, I am partial to Tabasco.

In the second bowl, mix together about 3-4 cups all purpose flour, 1 tbs. some type of spicy season all, about 6 shakes of cinnamon, and about a tsp. tarragon.

Put the seasoned wings one at a time into the egg mixture then into the flour mixture and then into the third bowl.

Put vegetable or canola oil in a large frying pan with high sides about 3/4 inch. Let the oil get hot, then add a single layer of wings. When you add the wings one at a time, the oil around the wings should bubble. Cook them on each side for 8-10 minutes. Reduce the heat if they start browning before the time is up.

When all the wings are finished frying toss them in a bowl with the store bought sauce and then broil them in the oven for about 5-10 minutes.

These are very good! I make them for my family all the time.

Fry the wings a bit until they're golden brown. In a saucepan melt a stick of butter, 1/3 cup of your favorite hot sauce (I like Louisiana or Frank's), and a packet of Good Seasonings Italian dressing mix. Toss the fried wings with that, and bake at 350 for about 20 minutes.

So good. Don't leave out that dressing packet!

I like the traditional original recipe. Go to the website for Frank's Red Hot sauce, you'll find it there. www.franksredhot.com Personally I like the fried version, but the baked is a little healthier.
