Imperial Chicken

4 1/2 pound Chicken
2 tablespoons onion, minced
1/4 teaspoon tarragon
2 tablespoons butter
1/2 cup orange juice
1/8 teaspoon salt
1/8 teaspoon dry mustard
1/4 cup currant jelly
2 tablespoons grated orange peel
2 tablespoons port wine
1 orange, peeled and sectioned
1 1/2 teaspoons cornstarch

With a fork, prick skin of chicken all over at approximately 2
inch intervals. Place chicken, breast side up, on metal rack or
trivet in slow-cooking pot.

In saucepan, saute onion and tarragon leaves in butter. Add orange
juice, salt, mustard, currant jelly, and orange peel. Cook over
medium heat, stirring constantly, until jelly is melted. Reduce
heat; stir in wine and orange sections. Brush 1/3 of the sauce
over chicken; cover slow-cooking pot and cook on low 7-9 hours.

During cooking drain fat and turn duck once, if possible. Stir
remaining sauce into cornstarch and cook over medium heat until
sauce thickens, then simmer 1 minute. Pour sauce over chicken just before serving.

To lower the fat content somewhat, pour the sauce off the meat and
refrigerate until fat rises to the top. Skim off the fat and reheat
before serving.

Chicken may be cut into halves or quarters to fit into 3 1/2 quart
or smaller slow-cooking pot.

Crockpot Lemon Chicken
Lemon and chicken are wonderful partners. Try this excellent crockpot recipe and serve it over hot rice or noodles to soak up all the sauce.
INGREDIENTS:
1 whole chicken cut into pieces (like legs/breast/wings/thighs)
1/3 cup flour
1 tsp. salt
1/8 tsp. pepper
2 Tbsp. olive oil
1 tsp. balsamic vinegar
3 Tbsp. ketchup
3 Tbsp. brown sugar
6 oz. can frozen lemonade concentrate, thawed
2 Tbsp. cornstarch
3 Tbsp. water
PREPARATION:
Mix flour with salt and pepper in shallow dish. Coat chicken pieces in this mixture. Shake off excess and brown in olive oil in a nonstick skillet over medium high heat. Remove chicken and place in a 3-4 quart crockpot.
Mix the vinegar, catsup, brown sugar and lemonade concentrate in small bowl and pour into the skillet. Cook and stir, scraping to remove browned bits, until mixture comes to a boil. Pour sauce over chicken in crockpot. Cover and cook on LOW for 7-8 hours or on HIGH for 3-4 hours. When ready to serve, remove the chicken to a warm platter and cover. Combine cornstarch and water in small bowl, mix well and stir into the sauce. Cook on HIGH for 20-30 minutes until thickened. Serve with chicken and hot rice. 4 servings

Try cooking it with onion, garlic, nutmeg, tomato puree, sweet soy sauce (the thick kind, I recommend Indonesian Kecap ABC), and a dash of fish sauce (Thai/Vietnamese: nuoc mam--don't overdo it coz it's soooo salty). Serve with hot jasmine rice and sliced cucumber.
