Here's a good recipe for a cheeseball:
2 packages cream cheese, softened
1 package dried beef, finely chopped
1 bunch green onions, finely chopped
Mix all ingredients together, form into a ball shape and place in fridge until firm.
You cal also roll it in the beef before you put it in the fridge.
Serve with crackers...yum!!

Taco Dip
From the bottom up
16 oz of Sour Cream – spread on bottom of 9 x 12 pan or glass dish
½ head of chopped lettuce. Cover all of the sour cream with this.
Jar of your favorite Salsa, Spread on top of the lettuce
2 chopped large tomatoes spread on top of the salsa.
1 lb shredded cheddar cheese, which ever you like. put on top of tomatoes.
Sometimes I mix Monterey Jack with the cheddar and I will put a few sliced black olives on top for garish.
Chill for a few hours and serve with tortilla chips…

Equal parts velveeta and mild salsa... melt together in the microwave and serve with corn chips or tostitos.. Not at all spicy if you use the mild salsa.
