Women can keep their hats on indoors, but guys (and I'm assuming you're one) should remove them immediately upon stepping under a roof. Your options if no appropriate racks are available....
A) Check the hat in the coat room (preferred);
B) Have the host/hostess check it for you, or place it in safekeeping;
C) If you decide to keep it with you, a neighboring empty chair is ok;
D) As a last resort, you can hook it on the back of your own. However, if your hat gets bumped into and squished, the responsibility is your own.

On the seat next to you, back of your chair, cloak room, coat rack under your coat. Fancy restaurant, you may ask the wait staff to take care of it for you... that's one of their jobs.
I want to thank you very much for even thinking about removing your hat in a restaurant. You have tremendous class and style. You will get far in life and this aint' the insides of a fortune cookie.
If I see another man with a baseball hat in a restaurant... blah, blah, blah - you know what I'm thinking.

If there is a coat rack you hang your hat and drape your coat over it. However if there isn't one, you fold your coat and place your hat on top next to you. It can be considered rude to ask the waiter or waitress to take care of it for you. It's like asking someone to watch your luggage in an airport while you go visit the restroom.
