~~~~~~~~ Pork Chop with Barbecue Sauce ~~~~~~~~

“Barbecue” originated from the Mexican-Spanish word barbacoa, describing meat grilled over a green wood fire. Although primitive, barbecuing is one of the healthiest ways of cooking, for it allow any fat to drip from the food. It also seals in all the flavours of the food. The recipe uses a delicious homemade version of American barbecue sauce, which was probably adapted from the devilled sauces made with strong mustard that have been used in British cooking for centuries. This may be prepared a day in advance if refrigerated and then reheated in the oven or simmered gently. Serve with natural yoghurt, filled jacket potatoes and green salad.

4 spare rib chops
1 medium onion
1 tbsp virgin olive oil
3 tsp horseradish sauce
1 tsp mustard powder
1 tsp celery seeds
14oz / 400g can chopped tomatoes
2 tbsp honey
1 tbsp malt vinegar
1 tbsp Worcestershire sauce
Chopped parsley for garnish

Chop the onion roughly. Heat the oil in a saucepan and sauté the onion over a medium heat for 8 minutes until transparent. Add all the other sauce ingredients. Cover and simmer for 10 minutes.

Meanwhile, trim any rind and fat from the spare rib chops and place them in an ovenproof dish large enough to hold them in a single layer.

When ready, spoon the barbecue sauce over the chops, cover and bake in the preheated oven for 45 minutes until thoroughly cooked and tender. Garnish with parsley and serve. Serves4.

My favorite pork chop recipe is easy and delicious! You can make it in a crock pot or in the oven. MIx together 1 jar of Gray Poupon mustard and 1/2 jar (about 8 oz. or so) of Apricot Preserves. Add 1 clove of garlic or just add garlic powder (about 2 tsp.). Pour this over the pork chops and cook in the oven at 325* for 1 hour if the bones are in the pork chops. You will need less time for the boneless, only about 40 minutes. They taste great.

Jerk Pork Chops 1/3 cup vegetable oil 1/3 cup distilled white vinegar 4 green onions, chopped 2 cloves garlic, chopped 1 Scotch bonnet chili, seeded and minced 3 bay leaves 3 peppercorns 1 tablespoon dried ground cinnamon 1 tablespoon ground allspice 1 teaspoon freshly ground black pepper ½ teaspoon ground nutmeg 3 pounds pork chops, about 1 inch thick Combine the oil and vinegar in a small bowl. Stir in the green onions, garlic, chili, bay leaves, peppercorns, cinnamon, allspice, pepper, and nutmeg. Trim any excess fat from the pork chops. Place the pork chops in a re-sealable plastic bag. Pour the spice mixture over them, coating each chop well. Place the bag of pork chops in a baking pan and place the chops in the refrigerator to marinate overnight.Allow the chops to come to room temperature before grilling. Heat the grill until the coals are somewhat white with ash; the flame should be low. Place the chops on the grill and cover with the lid. Grill for 5 to 10 minutes per side, until the chops are no longer pink in the center.

My favorite way to do pork chops is with apples.

You cut a few apples (I like Macs or Gala, but any tart apple) and put them in the bottom of a greased casserole dish. Sprinkle on some brown sugar and about a tbsp of flour and (if you want) a pinch of cinnamon. Toss to coat.

Then you bread your chops. The easiest, no hassle way, is Shake and Bake, but you can use Cornflake crumbs or bread crumbs and just season them to your liking.

Place the chops on top of the apples, cover, and bake until the chops are done (350 for 30 minutes?).


It is sooooo good. =)

In a ziplock, put about 1/2 cup soy sauce, some sesame oil, some hot sesame oil, chopped green onions, garlic, ginger, and a bit of olive oil and pepper. Toss the pork chops in, seal, squeeze them around, and refrigerate until it's time to grill.

Season lightly (salt, pepper or a nice rub), spray lightly with Pam for Grilling, then grill to your desired doneness. You can find instructions for how to grill pork chops at charcoalbob.com.

Then put a little of your favorite barbecue sauce in a small dish and use as a dipping sauce.

Add a tsp. of curry powder to one package of "shake and bake" for pork.Bake according to package directions.10 minutes before the pork is done, drizzle with honey and finish baking. It's my family's favorite way to have pork chops.

In a large skillet, pan fry on one side, flip, cook for a couple more minutes and finish with a can of chicken gumbo soup. Simmer until cooked through. Serve with rice.
