when I bake a chicken whole I roll a small amount of foil for under the chicken to keep it up off the bottom of the pan , then place 1/2 stick of butter cut long ways into the chicken and rub the rest of the softened butter on top and then rub chicken seasoning ( chicken rub ) all over the top , add a bit of lemon pepper if you like it and back with no lid for a crispier skin. yummy !

Slice a fresh lemon and slide the slices under the skin. Slide a whole fresh bay leaf under there, too. Garlic Salt/Pepper the top. Stuff a celery sprig (with leaves) and a whole onion (small) inside the cavity (you will throw that away when you serve it). Yes, you can rub the skin with a coat of light olive oil (like you rub on suntan lotion on yourself) before you salt/pepper it.

make a kind of paste with kosher salt, olive oil, fresh lemon juice and rosemary, rub all over. then stiff the bird with the left over lemon and some rosemary sprigs

put some nice streaky bacon across the breast to give it a nice flavour while cooking. it also moistens the chicken and stops it from drying out
