INGREDIENTS
8 ounces spaghetti
1 bunch green onions, sliced (white parts only)
2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
1/3 cup peanut butter
1/4 cup soy sauce
1/4 cup hot water
1 tablespoon cider vinegar
1 teaspoon white sugar
1/4 teaspoon crushed red pepper flakes
DIRECTIONS
Cook pasta in a large pot of boiling water until done. Drain.
Meanwhile, combine oil and onions in a small skillet. Saute over low heat until tender. Add ginger; cook and stir for 1 to 2 minutes. Mix in peanut butter, soy sauce, water, vinegar, sugar, and red pepper flakes. Remove from heat.
Toss noodles with sauce, and serve

Peanut Noodles with Shredded Chicken and Vegetables:
1. 1 pound boneless, skinless chicken breasts
2. 1/2 cup smooth natural peanut butter
3. 2 tablespoons reduced-sodium soy sauce
4. 2 teaspoons minced garlic
5. 1 1/2 teaspoons chile-garlic sauce, or to taste (see Ingredient note)
6. 1 teaspoon minced fresh ginger
7. 8 ounces whole-wheat spaghetti
8. 1 (12 ounce) bag fresh vegetable medley, such as carrots, broccoli, snow peas
1. Put a large pot of water on to boil for cooking pasta.
2. Meanwhile, place chicken in a skillet or saucepan and add enough water to cover; bring to a boil. Cover, reduce heat to low and simmer gently until cooked through and no longer pink in the middle, 10 to 12 minutes. Transfer the chicken to a cutting board. When cool enough to handle, shred into bite-size strips.
3. Whisk peanut butter, soy sauce, garlic, chile-garlic sauce and ginger in a large bowl.
4. Cook pasta in the boiling water until not quite tender, about 1 minute less than specified in the package directions. Add vegetables and cook until the pasta and vegetables are just tender, 1 minute more. Drain, reserving 1 cup of the cooking liquid. Rinse the pasta and vegetables with cool water to refresh. Stir the reserved cooking liquid into the peanut sauce; add the pasta, vegetables and chicken; toss well to coat. Serve warm or chilled.

I know someone who makes this with smooth or crunchy peanut butter--yes--the kind you buy in the store--any kind--and uses red chili paste and maybe tamarind and whole peanuts (some--if you are using smooth peanut butter)..heat up some oil--add red chili paste and tamarind (or you could add bits of lemongrass if you want to) and maybe basil--some salt and sugar to taste--andthen the peanut butter...heat for a bit and then mix with cold/chilled, or even warm spaghetti or soba noodles...You can add sesame seeds to the heated oil preparation or parsley if you want as well as soy sauce

Yes, this "noodle" soup- is called Pho (pronounced- fa)
My Hubby is from Thailand- I eat this , make this all the time.
Ingredients that you will need:
Rice noodles (Asian market)
Beef or meatballs (Asian market)
Lemon
Green onions
fried garlic
Bean Sprouts.
Fish sauce (Asian market)
soy sauce (Asian market)
and peanuts, OR peanut butter. (one table spoon- or to your taste.
Cook your beef or meatballs- at least 40 mins (for base stock)
pre soak the rice noodles until soft.
First add your bean sprouts (if you like them)
then boil a little water, and add your noodles to make them very soft.
then top them on your bean sprouts.
add your meat of choice-
add a twist of lemon,
pinch of black pepper
a half teaspoon of sugar
add your green onions
fried garlic.
fish sauce one table sauce- or to your taste.
one table spoon of soy sauce - or to your taste.
after all this, add your stock, meat.. and if you like a red hot sauce (from Asian market)
