Hi! this high-fiber party platter is super high in flavor.
Steamed vegetable platter with peanut dip
2/3 cup water
1/3 cup creamy peanut butter
1 clove garlic, minced
2 tsp grated fresh ginger
2 medium scallions, chopped
2 tbs packed brown sugar
2 tbs soy sauce
1/8 tsp chili powder
1 tbs fresh-squeezed lemon juice
6 large carrots, peeled, halved lengthwise, cut in 3x1/4-inch stick or 16 baby carrots with stems, scraped
2 large red or yellow bell peppers, halved, seeded, sliced 1/4-inch thick
1/2 pound snow peas, trimmed or 1/2 pound green beans, trimmed
8 radishes, sliced thin
1. For peanut dip: In a small saucepan, bring water to boil. Stir in peanut butter, garlic, ginger,scallions, sugar, soy sauce, and chili powder. Simmer 2 minutes. Remove from heat. Stir in lemon juice. Set aside to cool slightly or refrigerate until ready to serve.
2. In the large saucepan with a steaming basket, bring water to a boil. Fill a sink with ice water. Steam carrots for 3 minutes, lift out and plunge into ice water to cool, steam bell peppers for 1 minute, lift out, and plunge into ice water to cool. steam snow peas or beans for 2 minutes, lift out, and plunge into ice water to cool. Drain vegetables ang dry with paper towels.
3. On serving platter, arrange carrots, bell peppers, and snow peas or green beans with peanut dip in small bowl in the center. Add redishes for garnish and contrast.
Ideas. Mix up the vegetables you put on your hors d'oeuvres tray. Try fennel sticks, jicama slices, endive leaves, kohlrabi juliennes, tiny purple carrots, and bok choy ribs with any of your favorite dips.

Celery sticks, broccoli, radishes, bell pepper slices, cucumbers, baby carrots or carrot sticks, cauliflower. I've also seen some with dill pickle spears and sweet pickles. Dips, you can do one in the middle, or a variety...Thousand Island, Ranch, and French salad dressings are the most commonly used. I've also seen them use Frito Lay Bean Dip, and Jalapeno Cheddar Dip with these platters, as well as French Onion Dip. Best of luck to you.

You usually put sliced carrots or baby carrots, sliced peppers,(red,yellow and green) mushrooms, cucumbers, cherry tomato's, for dip you can put Creamy Italian, Ranch, Bleu Cheese, these are just suggestions!I usually put out crackers and cheese with the veggie platter!

baby carrots, cucumber spears or slices, brocolli heads, califlower heads, olives, pickles, im not big on raw zuchinni but thats on option, cherry tomatoes, Also i slice up some cheese and add a few wheat crackers to my tray. just a good variety!
I usally use a dill dip (premade at the store mine never taste as good ) or premade ranch or french onion is good too.

FRESH VEGETABLE PLATTER WITH DIP
DIP:
1 c. sour cream
1 c. mayonnaise
1/4 c. chopped capers
3 tbsp. chopped chives
1 tbsp. fresh dill
1 minced garlic clove
1 1/2 tsp. paprika
2 tbsp. chopped parsley
1 tbsp. lemon juice
VEGETABLES:
Cucumber spears
Carrot sticks
Green pepper slices
Celery sticks
Radishes
Cauliflowerets
Combine all ingredients for dip, and blend well. Place in refrigerator for 2 hours. Arrange fresh vegetables on platter and serve with dip.

You're received many great suggestions. My platter also includes sliced cucumbers and also sliced zucchini tastes great dipped in ranch dressing.
Carrots, celery, broccoli & cauliflower, cherry tomatos, black olives, spanish olives, slices of many colors of peppers, jicama (nice & crunchy).
The main thing is presentation... lots of color!

The usual is carrot sticks, celery, cauliflower and broccoli. But I put mixed olives, cherry tomatoes, green bell pepper strips, or green onions too.
It's really up to you.
