You'll keep the moisture in with the wax paper or plastic wrap, but why not use butcher paper in the first place. How you freeze it is another factor. If it is in a freezer at -4 F than you might be good for 6mo. though 3mo. is recommended. If your freezer is defrosted, that will cut that figure in half--or less.

It helps to understand why food "burns". Your refrigerator has two main purposes. 1) Coldness, to prevent bacteria from surviving and spoiling the food and 2) to dehumidify, that is, to take moisture out of the air. Bacteria also need moisture to survive. That, for instance, is why there are crispers in the 'fridge
Freezer burn is the result of food and meat being dehumidified ---dried out,
Some people believe erroneously that plastic wrap is sufficient to store food in, but regular wrap has microscopic pores in it which doesn't sufficiently protect food from burn or from bacteria. Always use "freezer" type storage bags both inside the 'fridge as well as the freezer.
Try shopping around department stores that cater to kitchen aids.
They carry plastic containers to fit every need.

Aren't butcher paper and freezer paper the same thing? Our parents did it, and we lived. I always write a date on the package and product on the package prior to freezing.

It shouldn't but you leave anything in the freezer for an extended time and it will get burned.

Get a Foodsaver vacuum food sealer. It is WORTH the money. And takes the worry and "off-taste" out of freezing. I love mine.
