Deviled eggs....(there are tons of variations), or cut them up and put them in a chef salad or Cobb salad, or really any salad. Oh, and Scotch eggs! They're wrapped in sausage and deep fried.
~~~~~~~~ Hard-Boiled Eggs with Peato ~~~~~~~~
Pesto is a thick basil sauce from Genoa an Italy. Although it is easy to make, you can use 4 tbsp of ready-made pesto sauce instead. Home-made sauce can be sealed and refrigerated for a week. You will need a liquidiser for this recipe,
4 eggs
1 small clove garlic
2 large sprigs basil
1oz/25g pine nuts
1oz/25g grated Parmesan cheese
1 tbsp virgin olive oil
Freshly ground black pepper
2 large tomatoes for garnish
Hard-boil the eggs for 10 minutes. Cool them under running water and shell, then cut in half lengthways and remove the yolks.
To make the pesto, crush the garlic and place it in the liquidiser along with the basil sprigs and pine nuts, reserving some basil leaves for garnish. Blend until smooth. Add the egg yolks and cheese and blend again, then add the olive oil and quickly blend once more. Season to taste, using plenty of pepper.
Pile the pesto mixture into the hollows of the egg whites and serve garnished with slices of tomato and the reserved basil leaves.

1/2 red onion, minced

DIRECTIONS
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
Serve on bread as a sandwich or over crisp lettuce as a salad

Awesome Egg Salad
INGREDIENTS
8 hard-cooked eggs, diced
1 cup mayonnaise or Miracle Whip
1/4 cup dried onion flakes
1/2 teaspoon salt
1 teaspoon mustard powder
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 teaspoon dill weed
8 slices white bread
DIRECTIONS
In a bowl, gently mix the eggs, mayonnaise, onion flakes, salt, mustard powder, garlic powder, pepper, and dill. Cover, and refrigerate 8 hours, or overnight. To serve, spread equal amounts on 4 slices bread; top with remaining bread slices to make sandwiches.
Note:
If using promptly, begin by placing onion flakes in a small bowl and adding 1/4 cup hot water. Let sit 10 minutes, or until soft. Drain and discard the water, then add the rest of the ingredients to the onion, blending well.

Mine is to mash the yolks, a good spoonful of mayo (I use real now because my husband hates Miracle Whip), a spoonful of Dijon, a smaller spoonful of dill relish, a dash of white vinegar, some dried dill, and salt and pepper.
And for the whites, I've recently found this trick of putting the whole boiled eggs through a potato ricer. Cuts down on the chopping and mashing.

My egg salad is hard-boiled eggs/finely chopped red onion &
celery plus sweet or dill pickle relish/ salt & pepper/Best
Foods mayo/ Grey Poupen mustard/dash of balsamic
vinegar. I forgot: swipe eggs down side of metal shredder.
(fast & easy). Stir and eat.

I find the secret is in the sauce, REALLY. Everytime I make egg salad, I use Miracle Whip, that's the difference noticed when people eat it. They know it's good, but don't know why. Same with potato salad.

I love it when egg salad has a bit of crunch to it--add watercress if you can otherwise add some finely cut pieces of celery....Just as much as you want..yes the dill will also give that crunch but the watercress/celery is good too! Some people like onions as well...again to taste...

I always just use a bit of mayonnaise, relish, a few drops of mustard, and dill as a summery topping and its always great.

I use Miracle whip, finely chopped green onions,(can use regular onion, just chop fine) salt and pepper. Be careful with the salt. You can add more, but you cant take it out.Enjoy!!
