Cream Puffs
Original recipe yield:
20 to 25 cream puffs
PREP TIME 30 Min
COOK TIME 25 Min
READY IN 55 Min
INGREDIENTS
2 (3.5 ounce) packages instant vanilla pudding mix
2 cups heavy cream
1 cup milk
1/2 cup butter
1 cup water
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
DIRECTIONS
Mix together vanilla instant pudding mix, cream and milk. Cover and refrigerate to set.
Preheat oven to 425 degrees F (220 degrees C).
In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet.
Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry.
When the shells are cool, either split and fill them with the pudding mixture, or use a pastry bag to pipe the pudding into the shells.

Chocolate Cream Puff Hearts
Puffs:
1 cup all purpose flour
1 cup water
½ cup margarine or butter
1 oz. (1 square) semi-sweet chocolate
¼ tsp salt
4 eggs
Filling:
2 cups whipping cream
2 to 3 tbsp powdered sugar
1 cup caramel ice cream topping
¼ cup chopped pecans
Directions
Heat oven to 375 F. Grease cookie sheets. Lightly spoon
flour into measuring cup; level off. In medium saucepan,
combine water, margarine, chocolate and salt over medium
heat until mixture comes to a boil. Reduce heat to low. Add
flour, beating vigorously until mixture leaves sides of
pan; remove from heat. Place mixture in large mixing bowl.
Add eggs, one at a time, beating with electric mixer at
medium speed for 1 minute after each addition; beat until
smooth and glossy. DO NOT OVERBEAT. To form each puff,
spoon about ¼ cup dough onto greased cookie sheet. Using
table knife, form heart shape by placing knife at edge of
dough and pulling inward ½ inch. Using knife, shape bottom
of puff into point. Bake at 375 F. for 40 to 45 minutes or
until puffed and browned. With sharp knife, pierce side of
each puff to allow steam to escape. Remove from cookie
sheets; cool on wire rack. In large bowl, beat whipping
cream at highest speed until soft peaks form; add powdered
sugar, beating until stiff peaks form. Fold in 1/3 cup of
the caramel ice cream topping and pecans.
To serve, split puffs; remove filaments of soft dough. Fill
each puff with about 1/3 cup filling. Drizzle remaining
caramel ice cream topping over tops of puffs.
Makes 12 puffs

Cream Puff Valentine Recipe
1 C. water
1/2 C. butter or margarine

3 1/8 oz. vanilla pudding mix - cooked kind
1 1/2 C. milk
1 C. whipping cream
1 pint fresh strawberries - halved or 20 ounces frozen berries - thawed, drained
powdered sugar
Preheat the oven to 400° F. Fold a 9 x 8 1/2-inch piece of paper in half. Sketch half of a heart on it; cut out. Open the paper to a full heart. Trace with a pencil on a baking sheet or parchment paper. Lightly grease the baking sheet, if not using parchment paper.
Heat the water and butter to boiling; reduce the heat. Add the flour, stirring vigorously over low heat for about 1 minute until the mixture forms a ball. Remove from the heat. Beat in the eggs, one at a time, beating until smooth after each addition. Drop the mixture by spoonfuls, with sides touching, onto the heart outline on the baking sheet. Bake for 45 minutes, or until lightly browned. Cool on a rack.
Mix the pudding mix and milk in a saucepan; cook according to the package directions. Cool completely. Whip the cream and add to the cooled pudding. Fold in the vanilla extract. Cut off the top of the heart cream puff. Fill with the cream filling and top with strawberries. Replace the top of cream puff. Dust with powdered sugar. Serve at once.

This recipe is quick & easy. Not made with the traditional sweet cream filling but, with cream cheese. It is a less risky recipe as humidity really counts when making cream puffs.
For the Pâte à choux pastry:
3/4 cup water
1/2 cup (1 stick/4 oz./113g) unsalted butter
1 cup all-purpose flour
1/8 tsp. salt
1 1/2 tsp. granulated sugar
3 eggs
1 extra egg mixed with 1 1/2 tsp. water, for the egg wash
Cream Filling:
8 oz. cream cheese, softened
3/4 cup granulated sugar
2 tsp. vanilla extract
2 cups whipping cream, very cold
Garnish:
Confectioners' sugar
Preheat oven to 425 degrees F/220 degrees C. Line a large baking sheet with parchment paper. Set aside.
For the Pâte à choux pastry:
In a medium saucepan bring the water and butter to a boil. Make sure the butter is completely melted. Add the flour, sugar and salt all at once. Stir vigorously until the mixture turns into a ball. Cook 1 minute longer. Remove from the heat. Cool 5 minutes. Add one egg. Beat with an electric beater until the egg is entirely incorporated. Repeat this process with the next two eggs. Using a pastry bag fitted with a large plain tip, pipe the dough onto the baking sheet, in 2-inch diameter rounds or balls. Whisk the remaining egg with 1 1/2 teaspoons water. Brush the surface of the rounds with the egg wash. Make sure you leave 2 inches or so around each dough puff. Bake in preheated oven for about 20 minutes. Puffs should be almost doubled in size, and they should be dry and golden. Cut puffs in half, horizontally, and let cool completely. Fill each puff with cream filling* (see note below) and place the tops back on top. Chill until ready to serve, no more then 4 hours. Sprinkle with confectioners' sugar right before serving.
Makes at least 12 cream puffs, maybe more, depending on what size rounds or balls you pipe out.
Cream Filling
Beat together the softened cream cheese, sugar and vanilla. In a separate bowl, beat the whipping cream until stiff peaks form. Fold the cream into the cheese mixture.

go to allrecipes.com and type in the search cream puff shell and they have one. seems pretty simple to make i just checked it out.
