I use herbs frequently in cooking, but many I use sporadically.

Generally speaking, how long will a dry herb stay good in a dark cupboard in a glass container? These are not freshly cut herbs, just your standard store bought herbs like McCormick.

They will keep indefinitely. I mean they will not actually go "bad." But the older it is, the less flavor you will get from them and you might have to add more herb to get the desired flavor. There comes a point when you should just throw it away and buy new. I think the average shelf life for dried herbs is 6 months.

If you listen to the so called "experts" you have to throw them all away at about 6 months. They keep indefinitely and the so called "experts" are paid salesmen. If they lose all smell, then replace them. Go to a cheese shop and see about bulk sales. They buy in bulk and repackage and you save. If a McCormick bottle costs $4.95, the cheese shop probably has more in a plastic bag or container for $1.69.

They last a very long time. Lately I have seen some cooking shows and the people cooking the food always tend to knock dry herbs. Just be sure to smell them before you add them to your dish.It should always smell like the plant it came from, if it doesn't then its time to toss it.

I live by mil414's answer. If it still smells the way it's suppose to, it's still fresh enough for safe use.
