What temp to insure chocolate doesn't burn?Any helpful tips would be great

In a nice deep pot, fill shallow with water. Bring to a simmer and place a metal or glass bowl on top. Make sure bowl is not touching the simmering water. Add your chocolate and melt. "Poor mans double boiler"...lol I do this all the time.

Put the chocolate in a glass bowl, and cook it at less than full power, for short bursts, no more than 20 seconds, and stir frequently to distribute the heat.
I prefer to make a double boiler out of a pan of water and a metal bowl. It works great, nice even heat. I have a double boiler, but it is small, more for dipping chocolates, than melting a big batch. I could kill my Dad for throwing away Mom's big double boiler! It was an antique.

A doubler boiler can be made by placing a heat proof bowl over the top of a pan with about an inch of water in it.

The microwave is tricky and chocolate is easy to burn and it will be hard for you to control the temper of the chocolate.

You can take a pan with the lid on it put it on the burner (low heat only) let the pan warm up (10-15 minutes) remove the lid, add the chocolate and stir. It will not burn as long as you keep the heat on low. Sure this takes longer than the microwave, but the results are so much better.

you can "make" a double boiler with 2 pans of any size. I do it all the time.

The microwave will work but you won't have as much control.

Try taking a larger pan and putting the water in it and using a smaller sauce pan on top. They don't have to fit perfectly.

large pot
fill with water 1/2 way
take a break have a cocktail
get a bowl that fits the bowl
take a break have one more cocktail
mise en place Get everything ready cream spoons more ice for your cocktail
cocktail time
turn on stove
wait for steam
place chocolate into bowl place bowl on table top COCKTAIL TIME
place bowl on top of pot you should be ready for another cocktail
now start melting

You probably have a metal mixing bowl that's just a tad bigger than one of your pots. Makes a double boiler just fine.
