im making a filling for cake and it says
1/4 teaspoon salt
2 1/2 tablespoons cornstarch
1/3 cup granulated sugar
1 1/2 cups milk
2 large egg yolks
i dont have cornstarch can i use flour instead and how much.will it taste the same and come out the same .(the cake im making is boston cream)

Cornstarch Substitute
For 1 tablespoon cornstarch, substitute 2 tablespoons all-purpose flour;

OR

1 tablespoon potato flour or rice flour;

OR

4 teaspoons quick-cooking tapioca;

OR

2 teaspoons arrowroot.

Arrowroot...however, this is not as common as it used to be 50 years ago. Don't get me wrong you can still find it in stores but chances are if you don't have cornstarch in your cupboard you don't have arrowroot. I would just go to the store and pick up the cornstarch. Sorry. :(

I'm afraid flour won't work...if your not worried about having to start over you could give it a whirl but be prepared for failure.

Substitutes: arrowroot, tapioca starch or potato starch . Potato starch is used as a thickener for sauces, soups, and stews. Potato starch tolerates higher temperatures than cornstarch when used as a thickener. It's a natural way to add moistness to many baked goods.

Flour will work but it won't taste the same. Just run out and get the cornstarch.

If you you are cooking the filling before you use the filling, try making a roue. Its on 1 Tbs flour to 1Tbs butter. Cook it together in the bottom of the pan before you add the milk and the other ingredients.

you can use flour try sifting it some if you can.
for future reference Wondra is a good substitute
