Old Fashioned Onion Rings
This is an actual recipe from a former employee of a popular drive-in restaurant. Crispy coated onion rings like the pro's make.
1 large onion, cut into 1/4 inch slices
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg 1 cup milk, or as needed
3/4 cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed
Heat the oil in a deep-fryer to 365 degrees F.
Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.
Hope this helps..

2 or 3 softball size white onions cut in 3's to make big rings
2 cans evaporated milk
1 part cornmeal to 2 parts flour
salt
pepper
paprika
garlic powder
chili powder
Cut onion slices and soak in evaporated milk for a 1/2 hour. Combine your dry ingredients and spices. As far as spices go you can leave them out or add any that you like. The above is a blend that I like. Heat a nice deep pot of oil over medium. Dip onion rings in evaporated milk then into your dry mixture...fry until golden. Makes a whole bunch. If you want a dipping sauce as well, try this out:
1 part mayo to 2 parts sour cream. Add the same spices you used in your dry mix to coat your rings. I also like to add some hot sauce for kick.

Here are two recipes. One easy, another a bit more time consuming, but tastier.
EASY ONION RINGS
2-3 lg. onions, sliced into rings
3/4 c. cornstarch
1/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. water
1 egg, beaten
Mix together well, all of the above except onions. Dip onion rings a few at a time in batter and fry in 1 3/4 inch of heated oil in large frying pan or deep fryer. Fry until golden brown, and drain on paper towels.
Oven-Fried Onion Rings
1 large egg white, lightly beaten
1/2 cup well-shaken low-fat buttermilk
1/4 cup all-purpose flour, plus 1 cup for dredging
1/2 teaspoon salt
1/4 teaspoon cayenne
1 large red onion (12 ounces), cut crosswise into 1/3-inch thick slices
Olive oil
Preheat oven to 450 degrees F.
Whisk together egg whites, buttermilk, flour, salt, and cayenne in a shallow bowl until smooth.
Separate onion slices into rings and pick out the 12 largest, reserving remainder for another use.
Heat 1-inch of oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking. Working in batches of 4, dredge onions in flour and dip rings into batter, letting excess drip off, then cook in skillet until golden brown, about 1 minute on each side. Transfer rings as browned to a lightly oiled, shallow (1-inch deep) baking pan.
Bake rings in middle of oven, turning once, until crisp and deep golden, 12 to 15 minutes total.

Are we related? Our Avatars look alike, lol!
Anyway, Slice a large white onion to make the rings, Then whip up a batter. You can use flour or cornmeal. I use cornmeal, mixed with a teaspoon of vegetable oil, about 10oz of water and eight ounces of beer. Salt and pepper to taste. Dip the onions in, then deep fry them in Canola or Vegetable oil.
