while it is true that boiled potatoes have less saturated fat per se they lose that distinction when covered in butter and other sauces to add flavour Most chips when cooked properly have less fat than most people realise and propoganda about cholestoral has made people paranoid about any form of frying. If you eat fries which are thin and stringy then the fat content per chip (fry) is much higher. Traditional English chips are thick and cooked in hot deep oil which seals them and prevents them soaking up oil.
As far as the veggie person goes most chip shop chips are cooked in veggie oil but they also cook sausages and fish in the same oil so it is a matter of choice considering meat content of a sausage and what percentage of that percentage is soaked up in the chip. But at all costs stay away from oven chips which are just processed crap and the closest they have been to real chips is the lorry they share with potatoes on the way to the shop.
At the end of the day it is all roundabouts and swings. - What you gain etc. So why not give rice or pasta a go

There may be compromise available. Like you, I prefer potatoes, but my kids love chips. I have used a NIgel Slater recipe from his book Real Food - which is AMAZING and you should try to lay hands on.
First - either you are using the fat from a roast you are cooking or take some oil, lard or dripping and heat it in a small metal roasting pan at 400 degrees F. (gas 6).
Here's the deal. Take as many potatoes as you need, peel them and cut them in to bite size pieces - big enough so they get plenty of crunchy surface. Then boil them in boiling salted water for only 5 minutes - and drain them. Then shake them around in the pan a bit to rough up the edges (this is important - and fun).
Tip the scruffy potatoes into the hot fat and return to the oven until thoroughly golden and crisp - a good 45 mins, maybe longer. Then salt to taste. Return to the oven and crisp until deep golden brown. (also stir them and turn them around a couple of times while I cook them).
[You can add chopped rosemary or thyme if you want some savoury flavour - but crumbled sea salt is best]
I find these have the crisp and salty fat that chip lovers enjoy - but the clean sweet potato flavour that potato lovers favour - and they are much healthier than chips!

for a change try slicing some potatoes with a potato peeler and frying them. Then add some of your favorite spices to make your own chips.
Your hubby doesn't know what he is missing with the variety of ways potatoes can be made.

potatoes because I just don't like chips anymore. Try making different things with potatoes so he might show some interest while you are trying to have him eat healthier

potatoes are so versatile, chipped, roasted, baked in their jackets, braised in the oven, sliced and smoothered with onion and cream, slowly cooked until tender. Oh and as to the person who said as a veggie she preferred chips cos most potatoes are cooked in animal fats????????? most chips are for sure.

Definitely chips we only have chips in our house once a year on Christmas Eve as a treat

My wife prefers chips from the chip shop because they put brousels in but I prefer chips when I fry them myself in vegetable oil.

Potatoes. Chips are great but even better if you only have them occasionly. Mash potatoes are my fave followed by roast, jacket, gratin (with cream- yum), boiled new and saute. Am loving sweet pots too!
