Here's how to turn leftover rice into a hearty main dish. You'll get the best results if the rice is cool; if you cook a fresh pot of rice for this dish, spread it out on a platter and quick-chill it in the freezer.

~~~~~~~~~~ Pork Fried Rice ~~~~~~~~~~

1 tbsp cornstarch
2 tsp lower-sodium soy sauce
3/4 pound well-trimmed pork tenderloin, cut into 1/2-inch-wide strips
1 tbsp vegetable oil
1 red bell pepper, cut into 1/2-inch squares
1 large carrot, thinly sliced
3 scallions, thinly sliced
1 tbsp minced fresh ginger
2 cloves garlic, minced
3/4 tsp salt
3 cups Napa cabbage, cut into 1/2 x 2-inch strips
4 cups cooked brown or white rice
2 tbsp rice vinegar
1 tsp sesame oil

1. In a medium bowl, combine the cornstarch and soy sauce. Add the pork and toss well. In a large nonstick skillet, heat the oil over moderately high heat. Add the pork and stir-fry for 5 minutes or until lightly browned. With a slotted spoon, transfer the pork to a plate.
2. Add the bell pepper, carrot, scallions, ginger, garlic, and salt, and stir-fry for 3 minutes or until the carrot is crisp-tender. Add the Napa cabbage and stir-fry for 2 minutes or until the cabbage is crisp-tender.
3. Add the rice and cook, stirring, for 5 minutes or until the rice is lightly browned. Return the pork to the pan and cook for 2 minutes or until heated through. Add the vinegar and sesame oil, tossing to combine. Serves 4.

This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.
INGREDIENTS:

* 1 green onion
* 2 large eggs
* 1 teaspoon salt
* Pepper to taste
* 4 tablespoons oil for stir-frying, or as needed
* 4 cups cold cooked rice
* 1 - 2 tablespoons light soy sauce or oyster sauce, as desired

PREPARATION:
Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry.
Remove the eggs and clean out the pan.

Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the soy sauce or oyster sauce as desired.

When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.

Yes - cook rice first as normal. I always use an automatic rice steamer. At about $20-$30, one of my best cooking gadget investments.

Look up some recipes online.

I usually fry one ingredient at a time and then set them aside in a pyrex baking dish set on a very low burner to keep warm while I keep frying the other things. I mix up the stuff in the pyrex dish as each new ingredient is added. Finally, I fry the rice, and as it's starting to get dried out, add some ginger-soy sauce to darken and flavor it to the level I like (not too much for me), then stir back in the other ingredients. That's my method anyway. I just made some last night - sweet bell peppers, onion, carrots, bok choy, celery, peas, scrambled eggs all mixed in - yum!

Hong Kong-style fried rice for two?
Ingredient:
Rice - prepare a day earlier
Prior to cooking:
Garlic - minced, a tablespoon
Prawns - 10, medium size(shelled)
Peas + carrots - 1/2 cup
cooking oil - 2 tablespoon (or less)
2 eggs (medium size) - beat lightly
Sale to taste (or light soya sauce)
Use non-stick pan and medium heat (gas preferably).
Method:
Heat up oil for 20 seconds. Add in garlic and fry till fragance. Then add in the prawns, the peas, carrots and stir-fry for a minute or until the prawns are cooked. Then add in the eggs, follow by rice. (turn heat to high). Add salt to taste. Then stir fry for another 3 minutes and the fried rice is done.
Garnish with lettuce (optional).

Things You'll Need

2 tablespoons peanut, sesame or other oil
2 cloves garlic, minced
1 teaspoon fresh ginger, minced (optional)
1/2 cup diced onion or 4 green onions, thinly sliced
1/3 cup diced carrot, cooked
1/4 cup frozen peas, thawed
4 cups cooked white or brown rice, cooled completely
1 cup chopped, cooked shrimp, pork or beef
2 eggs, lightly beaten
3 tablespoons soy sauce
Salt and freshly ground black pepper, to taste
Instructions
STEP 1: Heat the oil in a wok or large skillet over high heat. STEP 2: Add the garlic, ginger and onion and cook, stirring constantly, for 1 minute. STEP 3: Reduce the heat to medium, and add the carrot, peas, rice and meat and cook, stirring, for about 5 minutes. STEP 4: Use your stirring spoon to make a well in the center of the rice and pour the eggs into it. Let the eggs cook for 1 minute, then slowly start to stir and incorporate the egg into the rice. STEP 5: Add the soy sauce and cook for 2 minutes longer, stirring and tossing with the spoon. STEP 6: Season to taste with salt and pepper. STEP 7: Serve immediately.

Must use cooked rice for fried rice. Best is cold, day old.
In a wok or large skillet, heat 1 teaspoon peanut or olive oil.
Add 1 beaten egg, scramble, and remove, reserve.
Heat 1 tablespoon oil in wok. Add 1 or 2 cloves crushed garlic, 2 tablespoons finely mined fresh peeled ginger root.
Saute for 1 minute, add meat - chopped cooked chicken, beef, pork, or shellfish, and heat - do not allow the garlic to burn! Stir in the cold rice, breaking up clumps. Stir in 4 chopped green onions, white and green parts, and the reserved scrambled egg.
Season with soy sauce to taste.
Serve hot.

Yes, you use leftover rice. lets say you have a cup of leftover rice, take 1 tablespoon veggie oil and heat it in a fry pan or wok. add the rice, stir to coat with the oil, add 1 beaten egg and 1 tsp soy sauce, and stir until hot and the egg is not runny. That is it! you can add whatever you want...if you add veggies like onions or celery, cook them until soft in the oil before you add the rice.

Oh, for the rice... 1 cup rice, 2 cups water, in a heavy pan, cook 20 minutes, stir every once in a while, but try to keep lid on and steam in.

You want to fry the rice in butter first. Till it is brown.

Ingredients are to your taste, not everyone likes the same thing.

Then you want to put your water in with the ingredients, cover reduce the heat. 20-40 minutes later it is ready.

I made fried rice last night (rice a roni cheapest way to go) with Chinese pot stickers in it. Everyone liked it...

You boil the rice, drain very well and allow to get cold. Then fry the veg and meat, but do not add liquid. Then add your cold, dry rice.
