Get some jacket potatoes. Cook them in the microwave. Remove the inside, mash it up and mix in some lightly cooked peppers, mushrooms and onions.
Put the mix back into the skins and warm through in the oven.
Maybe add some cheese to the top.
That's what I am making for tea tonight.

Chilli con carne!
I make this quite often and i love it.
I use vegetarian mince, not because i'm a vegetarian but because it is so much nicer - no horrid bits of grisle or lots of fat!
fry an onion, a pepper or two, add some vege mince, two pureed tins of tomatoes, 4 and a half slightly heaped teaspoons of sugar, two level teaspoons of salt, quite a bit of paprika, and chilli powder to taste. I also like to add a couple of teaspoons of cornflour (must be mixed with a little cold water before adding) to thicken sauce a little.
This should warm your hubby up! lol

VEGETARIAN CHILLI
INGREDIENTS
1 tablespoon olive oil
1/2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 stalks celery, chopped
2 green bell peppers, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
2 (12 ounce) packages vegetarian burger crumbles
3 large tomatoes, crushed
1/4 cup chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans
1 (15 ounce) can garbanzo beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn
DIRECTIONS
Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. When vegetables are heated through, mix in the vegetarian burger crumbles. Reduce heat to low, cover pot, and simmer 5 minutes.
Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn, and continue cooking 5 minutes before serving.

Veggie bake. Slice veggies, all kinds, layer in a casserole dish, with herbs and spices to suit your tastes. Cover with a veg stock, top with homemade bread crumbs and grated cheese, and bake in the oven slowly, an hour or so will suffice.
Cabbage wedges, cut into wedges, keep the centre in as it will hold it together, cover with stock again, throw in some onion etc, top with same as before and bake. Different way with a commonly overlooked veg.

when i need a meal that's hot and ready to go i make a Stilton and broccoli soup really easy and quick its just veg stock,potatoes and broccoli cook together for 20 Min's or until cooked blitz in food processor(just let it cool a bit or it spills)then i crumble some Stilton into it or you could use another blue cheese. we have this with warm homemade bread or you could cheat and use part bake bread.i don't season it until after adding the cheese as there's salt in it.

normal salad, vegitable salad, spicy vegitable curry, mixed vegitable curry, make some items with chees,tomato , potato and beans, u can add some fruits salad also. after these u can have some chicken ( any kind of dishes) for non veg person.

How about a wild mushroom risotto? Or stuffed peppers? Or goat's cheese souffle? Or a vegetable stir fry? Or something I did recently was pears, pinenuts and stilton in filo pastry.. it was lovely.

I`d do red peppers stuffed with flavoured rice and served with potato wedges and salad. Yum! I`m not a veggie, but thats one of my faves.
