I think even better than regular potatoes are other varieties of potatoes such as kipfler. I often use sweet potato (kumara) instead, it's much healthier than using normal white potatoes. They're delicious and much lower in starch and carbs.
Slice the potato or sweet potato up, boil until they're halfway cooked through. Then you need to drain the water and dry them out on some paper towelling bc otherwise they won't be crisp. Then you can use some oil (vegetable oil is the best) and lighly cover the potatoes with the oil and place on a baking tray and pop into the oven.

Put 1 tablespoon of olive oil in a plastic (sandwich / freezer) bag with some seasoning. Cut your chips or wedges out of your potatoes and place these in the plastic bag. Rub the bag so the oil mixes and goes over the potatoes. Put the chips in a roasting tin and cook in a 200 degrees centigrade oven / gas mark 6 / 400 degrees farenheit. Turn over with a spatula half way through cooking, or when the underside is a crisp golden brown. Total cooking should take about 30 minutes. Yummy!

For your oil fears. Go to Walmart or Target and pick up hand pump in the kitchen isle. It is usually clear with a black top that is rounded over. You put oil into it of your choice and pump the top and it pressurized the container. The remove the black top and spray the chips with oil. Remember, you do not want an oil that burns easily. Try olive oil if you want and see if they meet your satisfaction but vegetable oil may be the way you have to go.
If your a true health nut. Use Coconut Oil as it has the highest boiling point before burning. Coconut Oil is one of the best oils for us. Research it, then love it.

Try Olive Oil. Expensive but well worth it.
Also - cut thicker chips - or flat round ones! They're great to dip in your egg!
And finally - keep the skins on. Not only does it make your life easier - but the skins are a good part of the potato - and add extra texture to the eating experience!

Part Boil your Potatoes.
Drain.
Heat Oven Pan in HOT Oven, with a Drizzle of Virgin Olive Oil.
Toss the Potatoes and try and get all surface area covered in oil.
Bake at High Temperature for 1 Hour (Depending on the size of the Potato)

There is no way to make chips which are defined as thin crisp slices of potato fried in deep fat without frying them in something. If you are definitely not going to use one of the many low fat oils available make something else to go with your beefburgers.

I like to slice them very thin (paper thin) and spray them with Pam or some other type of cooking spray.
Sprinkle with salt (if you don't want salt then God help you) or your favourite seasoning.
Bake on a cookie sheet at 450 F until they are crisp, not browned.

i bake mine in the oven! cut them long and quite thick and use spray cooking oil so you don't use too much and bake in the oven. sorry i couldn't give you the proper time as it depends on how big you cut them. but after 35 mins check them and choose what time yourself would they be ready :D.
