One tablespoon = 1oz
4 tablespoons self raising flour
4 tablespoons sugar
4 tablespoons margarine
2 eggs ( 1 egg = about 2oz)
Cream sugar and margarine
Beat in eggs
Fold in flour
Put in sandwich tins
Bake for about 30 mins @ gas 3

Here's a great recipe i use all the time: Victoria Sponge Cake Recipe Ingredients: 1 cup Butter 1 cup Sugar 2 cups Flour 2 teaspoons Baking Powder 4 Eggs 1 cup heavy Whipping Cream 2 teaspoons Sugar 1 raspberry Jam Jar Time: 30min Cake: 1 Victoria Sponge Cake Recipe Instructions: Mix the butter until light then slowly add the sugar. Beat until light and fluffy then add eggs one at a time and beat in well. Sifted flour and fold in with baking powder. Tip mixture into prepared 8 inch round pans. Bake 25-30 minutes at 375 degrees until the cake lift gently from sides or cake tester remains clean. Leave to cool in pans for 10 minutes. Then remove and place on a wire rack to cool completely. Whip cream and sugar to it has soft peaks then place doily on cake plate. Place one cake layer on doily and spread with raspberry jam and then top with whipped cream. Put second layer bottom side up onto the filling. Sprinkle with powdered sugar. Victoria Sponge Cake Recipe Cooking Time: Cooking time 30min. Store in a airtight cake tin. hi its very simple recipe
1] take 3 eggs ,1/2 cup of grain sugar, 1 cup of flour, 1 pinch of baking powder, 1 spoon of vanilla essence
2] break the eggs in a large vessel add sugar beat them .if u are beating by a simple beater which is not electronic one the take some hot water in a vessel keep the vessel which contains eggs on top of it and then start beating till it becmes stiff , it will not become full stiff but medium.
3] add flour and baking powder mix it very slowly other wise the mixture will collapse
4] then add the mixture in a heavely greesed tin and bake in a pre heated oven at 200 c for 10 15 min

Unless you have american measuring cups I would borrow scales or a dry measure (Tala make one) which has different scales up the sides for flour, sugar etc.

the same way your nan did... by look and texture....

half a sieve of flour (add bicarb to plain flour to get it to rise)
a chunk of fat/margerine /butter
an egg
sugar to taste...

if the mix is too dry, add a splash of milk...

chuck it in one bowl, mix it all up, and put it in the oven, somewhere in the middle on medium heat for the time between adverts on teh TV...

its possible to make it in one set of adverts, and by the next your eating it.. i make biscuits... (just add raisins etc and squish em out to a flat shape)

Fruit Sponge Cake

·Prep Time 50 min.
·Cook Time 30 min.
·Serves 8

Ingredients
1 1/4 cups half-and-half
1/3 cup granulated sugar
5 teaspoons cornstarch
1 pinch salt
2 large egg yolks, at room temperature
1 teaspoon pure vanilla extract
4 large egg yolks, at room temperature
1 teaspoon pure vanilla extract
3/4 cup granulated sugar
1/3 cup milk
1 cup cake flour
6 tablespoons unsalted butter, plus more for greasing
4 large egg whites, at room temperature
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1/4 cup currant jelly or strained apricot jam
2 cups assorted berries and sliced fruit, such as mango and kiwis

Cooking Directions
1.In a medium saucepan over medium-high heat, whisk the half-and-half, the 1/3 cup of sugar, the cornstarch and a pinch of salt until it comes to a boil. In a medium bowl, whisk 2 egg yolks, then slowly whisk in half of the hot mixture. Pour the custard back into the pan and cook, whisking, until it comes to a boil. Transfer to a bowl and stir in 1 teaspoon of the vanilla. Cover with wax paper and refrigerate for 1 hour.

2.Meanwhile, preheat the oven to 350 degrees F. Lightly butter a 9-inch square cake pan, line it with wax paper, then butter the paper.

3.In the bowl of a mixer fitted with a whisk, combine the 4 remaining yolks, the remaining 1 teaspoon of vanilla and the 3/4 cup of sugar. Beat on high speed until pale and thick, 3 minutes. In a small saucepan, bring the milk almost to a boil and, with the mixer at low speed, drizzle it into the yolk mixture. Mix in the flour until just blended. Transfer to a bowl and clean the mixer bowl and whisk.

4.Melt the butter until just warm. Place the 4 egg whites, cream of tartar and 1/2 teaspoon of salt in the mixer bowl. Whisk on medium-high speed until stiff but not dry, about 3 minutes. Fold one-third of the whites into the yolk mixture, then fold in the remaining whites and the butter.

5.Scrape the batter into the prepared pan; bake until a toothpick inserted in the center comes out clean, about 30 minutes. Cool in the pan on a rack for 5 minutes, then turn out and let cool completely.

6.With a serrated knife, divide the cake into 2 layers. Place a layer on a cake stand; top with the custard and then the other layer. Melt the jelly in a microwave and lightly brush over the cake. Arrange the fruit on the cake and brush with more jelly.
Yield: 8 servings (Serving size: 1 cake)

Tres Leches (milk cake)

5 eggs
1 teaspoon baking powder
2 cups white sugar, divided
1/2 teaspoon vanilla extract
1 1/2 cup all-purpose flour
1/2 cup unsalted butter
2 cups milk
1 can (14 ounce size) sweetened condensed milk
1 can (12 ounce size) evaporated milk
1 1/2 cup heavy whipping cream
1 teaspoon vanilla extract


Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.

Sift flour and baking powder together and set aside. Cream butter or margarine and half the sugar together until fluffy. Add eggs and 1/2 teaspoon of the vanilla extract, beat well. Add the flour mixture to the butter or margarine mixture 2 tablespoons at a time, mix until well blended. Pour batter into prepared pan. Bake at 350 degrees F (175 degrees C) for 30 minutes.

Pierce cake several times with a fork. Combine the whole milk, evaporated milk, and condensed milk together. Pour over the top of the cooled cake.
Whip whipping cream, 1 teaspoon vanilla, and remaining sugar together until thick. Spread over the top of cake.

Be sure and keep cake refrigerated, enjoy!
