It would depend on whether you prefer more public contact or not, and your ultimate goals in the industry.

Granted your interests can shift.

me for example, I excelled with both front of the house and back of the house, focusing on front of the house, but my passion has started to shift to the Back. My goal had been to be a Major Domo, but now it is starting to move towards operations and wines.

I would say figure out what you want to do the most, if you decide that your interests lay else where you can move in to the other field.

Don't be afraid to decide, pick the closest thing to your passion and after that point you can see where it takes you.

Best of luck in Japan.

I would work in the kitchen at first-that way, you can polish up your Japanese with native speakers who will not be offended by your lack of language skills. Guests, on the other hand, might get annoyed. Plus, it might be more fun!

It depends on how much advancement you want, and how quickly.
If you can find out company policy regarding advancement opportunities for each job offer, and time before advancement may happen, that will help you make an informed choice.
