my mom always creamed the corn by adding a mixture of water, milk , and flour..(you probably could use cornstarch in place of the flour)....she would put the corn on to cook with butter ,salt and a dash of pepper ...she added just a little bit of water...than when the water and corn started to boiling...she would combine in a small bowl...cold water about a third of the bowl.. about two tablespoons of flour and mixed it up until the flour dissolved..than she would add some milk about a fourth of a cup..and pour on the corn and let it cook for another couple of minutes until it thickened up...she always used frozen corn when making it....it always tasted great....now, I am going to have to make some...lol...

You can try this recipe to make creamed corn...
1/2 large onion, finely chopped
2 Tbsp butter
8 ears corn, husks and silk removed
1 teaspoon sugar
1/8 teaspoon nutmeg
1/2 cup heavy cream
Coarse salt and freshly ground pepper
1 In a large saucepan, melt 1 Tbsp of the butter on medium heat. Add the chopped onions and cook 2 to 3 minutes until translucent.
2 While the onion is cooking, remove the kernels from the corn. Stand a corn cob vertically over a large, shallow bowl. Using a sharp knife, use long, downward strokes of the knife to remove the kernels from the cob. Use the edge of a spoon to scrape the sides of the cob to remove any remaining pulp.
3 Add the corn to the onions and butter in the saucepan. Add 2/3 a cup of water and the remaining 1 Tbsp of butter. Bring to a simmer, reduce heat and cover. Cook for 10-15 minutes until the corn is tender.
4 Add the sugar, nutmeg, and cream to the corn. Cook, uncovered, for 5-6 minutes, stirring occasionally. Add salt and pepper to taste.

creamed corn is as simple as just mashing up whole kernel corn. OR it can be corn off the cob cooked with milk and butter until it's a porridge type consistency... CREAMED CORN - EASY SOUTHERN STYLE

Cut corn from cob (about halfway down the kernel), then scrape well. (You could do this the day before and store covered in the fridge.) Place butter in micro-proof casserole dish and microwave until melted. Stir in corn, water and sugar. Cover tightly with plastic and micro HI 3 min. In the meantime, put the cornstarch into the half & half so it will begin dissolving, stir frequently. Stir the corn and give dish ½ turn. Cover again and micro HI 5-7 min. Then stir the half & half mixture into the corn, cover and micro HI 2-3 minutes. Stir well, adding salt & pepper to taste.
if i were you i'd just try with kernel corn, if it doesn't seem right, mush it up next time.

So Easy Old Fashioned Skillet Creamed Corn
1/4 cup butter (no subs)
2 1/2 cups fresh corn kernels
1/2 cup half-and-half cream
1 tablespoon cornstarch
1 tablespoon sugar
1 teaspoon salt (or to taste, I use seasoned salt for this)
black pepper
In a large skillet over medium heat melt the butter.
Stir in the corn kernels and the half and half cream; mix to combine.
Sprinkle with cornstarch, sugar and salt; bring to a boil, stirring constantly.
Reduce heat and simmer stirring occasionally for about 10-12 minutes.
Season with black pepper to taste.
