I have 2 ideas for you...

1)you can let people see the difference between traditional and canard layout.....you make 2 models of one half of airplane(for example half fuselage and the left wing) and fix them to a support that let them rotate......so you let see that canard is instable while traditional is stable....

2)you can build a little plexiglass box(you need 1 transparent face) of about 60x15x3 cm.
or also 1cm thick, remember that if your water pump(for example the kinds used in aquariums) is smaller to have high speed you need to reduce the thickness.
you build a solid airfoil shape thick as the box, so 3cm....and you place it near the 3/4 of the box length(45cm) with an angle of attack of about 10°.
connect the back of the "tunnel" to the pump inlet, and the pump outlet to the front of the tunnel. (better if the tunnel outlet goes into a tank, and the pump takes water from the tank) and fill the plant with water, you can put little particles in the water but pay attenction if the pump may be damaged..
in conclusion you can make 2 holes in the largest surface, one just above(1 cm) and just under the airfoil. and put a transparent pipes in holes. these because the levels of the water will be different, showing the different pressures in those 2 points

Just have a cross section of a wing. then you can give a bit of a talk about how the wing creates lower pressure above the wing causing lift. Chuck in a few pics of birds and your done!

Talk about propellers or why the plane is built with bernoulli's theorem based.. I think Propeller is best to speak on..!!
