Frito Chips! they are yummy and add some crunch to an otherwise boring limp rolled up chili dog.

Beans...black beans, pinto beans, refried beans. Pick yer poison.

Cheese, again, up to you.

Meat, again! Up to you. Chicken and beef are just the beginning.

Lettuce, tomato, onions, green chilis, salsa, pico, olives, guac, sour cream, are all good condiments.

If you are a vegetarian you can try mushrooms, tofu, mixed cheeses, more beans, veggie meat sub crumbles (they look like hamburger)

I have a breakfast burrito that I really enjoy. I make huge batches of the filling and then wrap them in saran and freeze them. They nuke up nice.

You start by laying out some cream cheese to soften, get out the tortillas.

Heat a skillet to medium and start cooking up some bacon or any other uncooked meat you want in there. While that is going, prep some onions, garlic, green peppers, mushrooms, whatever else like that.

Then start defrosting some tator tots in the microwave until they are mushy.

When the meat is done, drain if needed but leave the skillet slick. Then start scrambling the tator tots in the skillet with the meat. Add the peppers onions, etc.

Then finish softening some cream cheese in the mic. VERY VERY LOW power. Or pop it in a zipper bag and warm it up a little in a sink of hot water.

Get eggs out and start cracking. Whisk together with a fork, add some salt and pepper.

When the potatos start to brown, add the eggs and start scrambling them with all the other ingredients in the skillet.

Add any precooked meats at this point. Cubed ham, turkey slices, taco beef, leftover steak, whatever.

When that is all warmed through you should remove from heat. This is the completed filling for your burritos.

Lay out your tortillas and frost them with cream cheese, salsa, pico, etc.

Add filling to each tortilla.
Add cheese.

Wrap them up into burritos. Wrap in saran wrap and pop in the freezer.

TO reheat. Unwrap it and nuke for about 90 seconds depending on your mic.

Breakfast Burrito Filling
20 min 5 min prep 6 servings

2 cups cubed cooked potatoes
1 small onion, chopped
1/2 green pepper, chopped
1 clove garlic, chopped
1/2 cup ham or bacon or beef or pork, cooked and chopped
3 large eggs
2 tablespoons milk or water
1 tablespoon margarine or butter

Melt margarine in skillet.
Brown the potato, onion, pepper, and garlic in the skillet (until the vegetables are tender).
Add the meat and heat until the meat is heated through.
Mix the eggs with milk or water, and pour over the meat and veggies.
Cook, stirring, until the eggs are done.
Spoon into flour tortillas, along with 1 tablespoon of grated cheese per tortilla.
Serve with sour cream and salsa on the side.

1 pound lean ground beef
1/2 cup chopped onion
1 clove garlic, minced
2 teaspoons chili powder
1 teaspoon dried leaf oregano, crumbled
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 can (16 ounces) refried beans
1 can (10 ounces) enchilada sauce, divided
6 (8-inch) flour tortillas
shredded lettuce
garnishes
PREPARATION:
In a large skillet over medium heat, cook ground beef, onion, and garlic until meat is browned, stirring often to break up meat. Drain well. Add chili powder, oregano, cumin, salt, and pepper; simmer for 10 minutes.
Beef Burritos
Add refried beans and 1/2 cup of enchilada sauce. Heat thoroughly.
Wrap tortillas in foil and place in a 350° oven to heat for 10 minutes. Spoon about 1/2 cup of the ground beef mixture onto each tortilla; roll tightly and place seam-side down on serving platter lined with shredded lettuce. Spoon remaining enchilada sauce over tortillas. Garnish and serve with any of the following: shredded cheese, sliced ripe olives, chopped tomatoes, sour cream or guacamole, and more shredded lettuce. Burrito recipe makes 6 burritos.

Sour cream is a necessary ingredient to get a "light" feel in the burrito, thinly line across the entire burrito.

We like chili burritos...simple, fast and good.

You just add a can of chili, a can of refried beans, some cooked ground beef and salsa, put it together like a burrito and add whatever guac or sour cream or shredded cheese toppings you'd like.

It's not a "traditional burrito" but it's very good!

Flank Steak Burrito w/Avocado Dip

4 1/2 lb Flank steak
3 Bay leaves
1 md White onion, finely diced
1 ts Peppercorns
2 qt Chicken broth
3 oz Olive oil
3 md Red onions
1 11 oz. can jalapeno chilies,
-seeded, minced
5 Cloves garlic, finely
-minced
12 oz Tomatoes, diced
2 tsp Cumin seeds, crushed
Salt to taste
White pepper to taste
4 oz Black or green olives,diced
16 Flour tortillas
AVOCADO DIP:
4 Avocados, peeled, pitted and
-chopped
1 1/2 tsp. Lemon juice
1 1/2 tsp. Rice vinegar
1 tsp. Fresh cilantro, chopped
1 med Red onion, finely chopped
1/2 bunch Green onions, minced
Salt to taste
White pepper to taste

Place flank steak in large 4 quart stock pot with bay
leaf, white onion, peppercorns and broth. Bring to a
quick boil and reduce to gentle simmer. Cook flank
steak until tender. Add additional broth if needed.
Remove from heat and cool.

Cut flank steak into small julienne slices. Discard
broth.

In large non-stick skillet heat oil, add diced red
onion, jalapeno and garlic. Saute until translucent.

Add tomatoes, simmer gently over low heat for 10
minutes. Add cilantro and cumino seed. Combine
thoroughly and add julienned flank steak. Add salt
and white pepper to taste. Add olives. Heat
thoroughly, and remove from heat.

Fill equal amounts of flank steak filling into the
flour tortillas. Fold into cylinder shape and serve
with Avocado Dip.

Avocado Dip: Combine all ingredients thoroughly,
season and keep mixture chunky. Serve with burritos.

Dog, cat, 'possum, armadillo, squirrel. Just use what ever you find along the road out there. Skunk will add it's own distinct flavor.
