The same way you would behave on a date with any woman. I am a single mom. I'm engaged now, but while I was dating...guys did all the same things. They picked me up and we went out. I personally kept interaction between them and my son completely off, because I didn't want anyone getting in my son's life unless they were staying in my son's life.
Anyway, just take her out and have a good time. Be aware though that when she says she needs to get home, get her home. She probably has a sitter waiting.

I've had a similar experience. These other folks might fail to understand that behaving like you would "on any other date" doesn't apply, since you're not dating in a standard social situation. Don't try to avoid the topic of "my kid....." because it tells her immediately that you're uninterested in her child, ergo, you're uninterested in forming a family. Even if you are, this is counterproductive to the success of your date, as she will be constantly reminded that "he doesn't like my kid."

So, be willing to talk about how you feel about kids, her kid, parenting, fatherhood... even if you have negative feelings about all the above. Just don't avoid the topic and awkwardness will disappear.
