pick pieces that are not too thick or thin- about 1/2- 3/4 inch thick is best
roll the veggies you want to grill in olive oil and sprinkle with salt. place on a HOT grill for about 3 minutes per side

Grab your grill or George Foreman thing, cut the vegies into 1/2 inch or so slices, brush with olive oil, and grill for 2-5 minutes depending on what kind of thing you've got.

Grilled veggies are so tasty and healthy using olive oil and spices they are so good for you.
Take your veggies wash them well and then take a dish and pour olive oil in enough for the amount of veggies you have to coat them..add some lemon juice, paprika, ground black pepper, garlic minced and salt (careful with the salt lemon juice acts as salt substitute) ...then take teach veggie that you cut in half so you have a flat side to each one....and dip in the oil and spices then lay on the grill..either on top of your stove top grill or outside grill....don't have too close to the heat so they burn.....but if done in the kitchen you have more control over them...let cook for a few minutes then turn over and cook until they are marked and golden.

cover a baking sheet or the low oven pan withe parchment paper or aluminum foil. slice up vegetables--I recommend zuchinni, sweet and white potato, red pepper, mushrooms (can be whole) and cherry tomatoes (leave whole) and put them on the sheet/pan in a single layer. Drizzle them with olive oil, and herbs of choice (I recommend rosemary and a little salt). Put them in the oven on the broiler setting and take them out when they are lightly browned.
