I would choose Irenaeus, he was such an influential person in our interpretation and understanding of Christinaity. A person who wrote so wisely about the faith. A wonderful early church father.
His writings give a lot of creditionals to those who claim very early dates for many of the New Testament books giving them even more authenticity.
