Tough question... How to choose just one restaurant....
Number 1A would be Patsy's. Just a great authentic NYC eatery. Great food, drinks, people-watching and service.
Number 1B would be Ben Benson's steakhouse. All the same reasons....
I can think of a few more so I better stop...
Okay one more - Forlini's restaurant is an Italian restaurant in Chinatown. Same reasons, with some VERY interesting people watching...

Esca near hell's kitchen (Mario Batali place)
fresco by scotto - italian in midtown
JG Mellons has the best bugers on the UES
Lili's noodle house on 3rd Ave and 85th - I just like it htere!

Check out Dylan Prime -- AWESOME steakhouse. Very romantic and the service is great. They have the lounge and restaurant menu online. If you go, definitely try one of their dessert martinis.
