Pancakes are basically the same as crepes, they just have a thicker batter. I have used a typical frying pan more than a griddle.
Just remember to make the cakes small enough to get the utensil your going to use to turn them over can get under pancake easily.

Heat you pan first, add a pat of butter, pour in your batter, and cook for about a minute, flip, using a spatula, and cook for about another minute on the other side. It is best to use a non-stick frying pan, but if you use a skillet, then just make sure to heat the pan first. To prevent butter burn, take the pan off the fire when you add it. If your pan is too hot, add just a bit of oil, and the butter will not burn. Oil is flavorful in pancakes.

one cup flour
two teaspoons baking powder
one-quarter teaspoon salt (not needed)
beat and add:
one egg (optional)
add:
1 cup milk (scant)
stir gradually to make smooth
add:
1 teaspoon melted butter or oil
cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.
Serve with Vermont maple syrup.
These pancakes are sure to be tasty -- if you're watching your sodium intake, you can make them without salt and baking powder, which also contains sodium (as does milk), and they'll probably still be pretty good. We never add salt to anything, but when we omitted the baking powder the pancakes came out a little bit on the glue-ey side.

Yes I have made pan cakes in a frying pan for years . oil the pan lightly with your favorite oil .or use a no stick spray pour batter in pan cook untill you see bubbles form turn and brown other side .I use a no stick pan.a cast iron skillet will work also.

Sure! I spray my pan with some PAM spray before I turn it on. The only thing you have to watch is that your pan isn't too hot, or your pancakes will burn before they finish cooking. I usually turn my stove to about medium or just before medium heat.
After you pour the batter, wait for bubbles to come up and fully pop before turning them. That's the trick.
Hope it works out for you (I put chocolate chips in my pancakes...it's awesome!)

That's the only way I have ever made pancackes! (well, when I was a kid I used my parents griddle...but that was a long time ago).
The only difference is you can't make as many as once.
No problem. Cook, eat, and enjoy!
