Yes, what you learn you can become. Also some of the best education that changes your character is "Life Lessons" that happen outside of the classroom. Don't get me wrong, I learned a ton in college, but college allows you to learn the book stuff. The education through life lessons is if you make a mistake you learn from it. If you go out and drink to much and the next day fail a test because of the hangover, that is a life lesson. That will effect what your character does the next time you have an important test... you won't (or shouldn't) go out and get wasted the night before... get it!

How can it not affect your character? Any true learning makes you think which should make you better. I believe that it is important to study languages, literature, other cultures, music, art, sciences, math, etc. and many other subjects which make up a liberal arts education, along with technical courses if you need them.
Why? Because you prepare yourself to be useful through what you learn. Learning is only a waste of time if it is useless, regardless of whether we are talking about classes or independent learning through reading, observation, or research on the Internet.
