My dough is ready to bake, and I have also added the chocolate chips. However, after baking 2 trays I realised that the mixture requires more sugar. Can I still add more white sugar in at this point?

Yes. you can add sugar, although there may be a minor change in the texture. Use superfine or confectioner's sugar, if you have it, since it will blend in more readily than regular granulated sugar.

To prevent this in the future, bake a single test cookie before doing a whole sheet. Also, premeasure all your ingredients before starting to avoid mistakes and confusion.

After adding flour to your wet cookie ingredients, the rule is usually not to mix it too much -- only enough to combine the ingredients -- because too much mixing makes the cookies tougher.

That is what I just read in a baking book. But I suppose a person could experiment and see what really happens. Chocolate chip cookies are usually good anyway so long as they aren't burnt. or underbaked.

ya, sprinkle the sugar on top of the cookie once they first come out of the oven...the sugars will melt and adhere to the cookie...not that you couldnt add it to the dough but do u really want to risk the outcome? u cant ruin a cookie :)

It won't dissolve well. Maybe if you have superfine or confectioner's sugar. You might also try sprinkling a bit on each cookie before baking.

I would not add it to the dough.
I would sprinkle it on top of the cookies.
