Hi, anyone has any idea of modern australia recipes (that has to come from Sydney)? I have the ingredients scallop, beetroot and potatoes.

I want to be a good host for my Sydney friend who's coming tomorrow. Help, people??? =XX

Australian Garlic Scallops

Ingredients:
500 g scallops, flesh
1 medium onion, diced finely
4-6 cloves garlic, finely chopped or crushed
1 tablespoon olive oil
100 ml pouring cream
4 spring onions, sliced chinese style on an angle
1 dash white wine
1 tablespoon finely chopped parsley

Fry garlic and onion in oil on a med-high heat for 2 mins, but don't allow to colour.
Add scallops, lightly cook on 1 side for 20 seconds.
Continue to turn and cook for another 20 seconds then remove from pan.
On medium high heat, add the splash of wine and reduce for 1 minute.
Add cream and reduce until the sauce thickens to a nice coating consistency.
Add scallops, spring onions and gently toss in sauce for 1 minute.
Place scallops on a mound of rice pilaf and pour over sauce, then garnish with parsley.
You can always omit some scallops and add prawns.

There aren't many real "Australian" recipes, well there's some of course, but we're more a kind of fusion type cuisine. Apart from meat pies, we're still a bit backward with genuine local tucker. And I wouldn't say recipes are very regional either, I guess Queensland have more tropical kind of food, and Tasmania is more "hearty" but that's climactic not regional. I could be wrong, but of the top of my head I can't think of any recipes which scream "Sydney!"

I'd try some scallop on the BBQ, maybe with a bit of a marinade, just some lemon juice, pepper, salt... and maybe a roasted beetroot, potato and rocket salad with a balsamic dressing...

We're a pretty easy to please bunch. I'm sure they'll be happy with whatever is plonked in front of them! And although I'm sure they'll appreciate the effort, they'll be just as happy with something that's "native" to your home too, after all isn't travel all about new experiences?

They get enough of their own cuisine at home. Most epople travel to other destinations to experience other tastes and customs. Take them to your fave restaurant or serve up a traditional meal from your region. I'm sure they get their fill of beet root at home and are looking forward to something new. Good on you though for wanting to be a good host!
