I want to know how to make real hot chocolate without the little chocolate packets. The way my grandmother would have made it

I use 1/2 sugar, 1/2 cocoa and for a treat, chopped real chocolate.
1 cup cocoa
1 cup white sugar
1 cup chopped good chocolate (optional but yummy)

Mix 1/4 cup mix to 1 cup milk (the higher the fat content the better though I use skim and it's yummy). Mix and bring JUST to a boil and immediately remove from heat. Pour over marshmallows and enjoy! My grandma loves mine and says it's like her mom made when they could afford a little cocoa. They used a higher fat milk too for the rich flavor!

wow your question brought back memories when my Mom would make hot chocolate or cocoa for us in the winter on cold mornings. I can remember how she did it and fussed if it boiled over...lol. Most of the time she stood there until it was completed with no problems. There were no "instant" drinks like we are used to these days back in the 40's...times have changed. There is something about going back to those days that help bring back more pure tastes and memories.

Here is how she made it:
Mix cocoa, sugar, salt and water in a saucepan over medium heat until it comes to a boil.
1/2 cup sugar
1/3 cup hot water
dash of salt
1/4 cup cocoa

cook for 2 minutes and keep stirring constantly.

Stir in 4 cups of milk and heat do not boil...remove from heat and add vanilla 3/4 teaspoon.

You can then add marshmallows that melt and are so yummy.

note there are many brands of cocoa I found that "Ghiardelli" is my favorite but if you don't have it you will have a good cocoa just the same.

You can find the recipe in any good cookbook or on the internet. I think Nestle's has an excellent recipe for it on the back of their chocolate morsels packets which are widely used for TollHouse Chocolate Chip cookies

You don't want to drink hot chocolate made from those lame Swiss Miss packets. Those contiain perservatives, partially hydrogenated oils, sodium benzoate and other nasty stuff in them.

Milk sugar, water and sweetened melted chocolate is all you need. You could use unsweetened hot chocolate and adjust the sweetness accordingly. I use soy milk and add unsweetened chocolate to it. It's not that good, but that's the healthier, fast way to make hot chocolate. Soy milk is already sweetened, so that's all the sweetness I need.

My mom used to mix about half a cup of sugar to three or four tablespoons of cocoa in a saucepan. She would slowly stir in enough milk to make a paste -- be forewarned that this does take a considerable amount of stirring.

Then she would turn the heat on Low and slowly add more milk to the paste, stirring constantly until it reached the proper consistency for drinking. She would also add a teaspoon or so of vanilla at the very end.

The two important things are not to let the milk boil and don't omit the first step. If you just dump all the milk in without first making a cocoa-sugar paste, you'll never get the cocoa to incorporate properly.

Here is the one that my mom used to make for us when we were little. She would also add a pinch of cayenne pepper when it was really cold out it helped to warm us up a little faster.
3 tablespoons unsweetened cocoa powder
1/4 cup sugar
4 cups milk
1/4 teaspoon vanilla
miniature marshmallows
PREPARATION:
Blend cocoa and sugar in a small bowl. In a medium saucepan, heat milk to scalding. Mix about 1/3 cup of the hot milk into the cocoa-sugar mixture, then pour cocoa mixture into hot milk in the saucepan; stir until well blended.
Stir in vanilla. Serve with mini marshmallows. Serves 4.

INGREDIENTS
1 1/2 cups warm water
4 (1 ounce) envelopes instant hot chocolate mix
2 cups vanilla ice cream
1 1/2 cups half-and-half cream
DIRECTIONS
In a blender, combine water and cocoa mix; cover and process until dissolved. Add ice cream and cream; cover and process for 30 seconds or until smooth. Pour into chilled mugs.

Do you want the recipe for hot chocolate or hot cocoa? These are two different drinks.

Hot chocolate is made by melting chocolate and whisking in warm milk. (The usual proportions are 3 oz shaved or chunked semi-sweet chocolate to one 8 oz cup milk.) Serve topped with whipped cream or marshmallows or marshmallow whip. You can then top that with a few shavings of chocolate, if you want to get fancy. I've also had hot chocolate made with half-and-half instead of milk, but it was too rich for me. I prefer hot cocoa.

Hot cocoa is made by cooking cocoa, sugar and a bit of salt in a little bit of water. Then you add milk (or I prefer half water and half milk) and heat that. Add a dash of vanilla extract and serve the same way as the hot chocolate.

Hershey's Hot Cocoa Recipe

1/2 cup sugar
1/4 cup Hershey's(r) Cocoa
dash salt
1/3 cup hot water
4 cups milk
3/4 teaspoon vanilla extract

Mix sugar, cocoa, and salt in a saucepan, stir in water. Cook and stir over medium heat until mixture boils; boil and stir two minutes. Stir in milk and heat. DO NOT BOIL. Remove from heat and add vanilla.

My grandma taught me how to make homemade hot chocolate. heres how i make it.
1. Put a small amout of water into a pan.
2. Add 1 teaspoon baking coco.
3. Add 1 tablespoon sugar
4. Add milk. Put in as much as you like.
5. Add 1 capful Vanilla

Heat it up. and enjoy. I add more coco depending how how chocolatey i want it.

Look in the Betty Crocker cookbook. It tells you how to make it under Beverages. You have to use Cocoa and Sugar with hot water to make it.
