Starbuck's Lemon-Poppy Seed Scones

2 cups flour

2 teaspoons baking powder

1/4 teaspoon baking soda

2 tablespoons sugar

1 teaspoon poppy seeds

2 teaspoons grated lemon rind

1/3 cup butter

1/2 cup buttermilk

1 egg, lightly beaten

1 tablespoon milk

Glaze

11/2 tablespoons fresh lemon juice

1 cup powdered sugar

• Combine dry ingredients; cut in butter until crumbly. Add buttermilk and egg, stir until moistened. Turn dough onto lightly floured surface and knead 5-6 times. Divide dough in half, roll each portion into a 6-inch circle. Cut each circle into 8 wedges and place 1-inch apart on lightly greased baking sheet. Bake at 425 F for 12-15 minutes or until golden brown.

• Combine lemon juice with powdered sugar and drizzle over warm scones.

Yield: Makes 16 scones

Ingredients:
Lemon Scones
3 cup flour (750 mL)
1/3 cup flour (750 mL)
1 tbsp baking powder (15 mL)
1/2 tbsp salt (2 mL)
1/2 cup unsalted butter, chilled and cut into cubes (125 mL)
Zest of 2 lemons
1 cup buttermilk (250mL)
2 tbsp 35% cream (25 mL)

Directions:
Lemon Scones
Preheat oven to 400 degrees F (200 degrees C).
In a medium sized bowl, whisk together the flour, sugar, baking powder and salt.
Add butter and mix with your fingertips, or a pastry blender until the mixture resembles coarse meal. Stir in lemon zest. Add buttermilk and one tablespoon 35% cream and mix just until combined.
Transfer dough to a floured board and divide into 2 parts.
Knead dough 4 or 5 times, until dough comes together. Pat into 6-inch diameter round. (Dough will be about 1" thick).
Cut each round into 6 wedges and place slightly separated on a greased baking sheet.
Brush the tops with the remaining cream and bake for 20 minutes, or until lightly browned.
Serve warm with Raspberry Butter.
