In the case of some pious Jews, it's because one of the names of god in the Tanakh (Jewish Bible) was originally spelled 'Yhwh', because the earliest versions of the Tanakh didn't include the vowels. Later Jewish scholars (but we're still talking a long, long time ago) basically had to speculate about how that name was pronounced, and they came up with 'Yahweh'; however, many Jews still consider it a bit presumptuous to add stuff like vowels to the Bible, especially if it's the name of god.
In the case of Christians who do it, I can only assume it's an attempt to emulate the example of the somewhat more rigorous orthodox Jews. Nowhere in the original Greek of the New Testament is god's name spelled without vowels, so there's really no point in Christians doing it. In fact, it's an arguably somewhat ostentatious way of broadcasting how pious you are.

In some faiths to write the name of god is creating a false image of god (like an idol) and therefore the name is not spelled out but represented as G_d.

OK - heres an athiest who was raised in a jewish/catholic family.
Essentially - if you write GOD on a piece of paper you could then throw that piece of paper away - defiling the name of God. Thats why some people (mainly the Jewish faith) write G-D.
As long as you don't print this out, you'll be fine!!!

There is nothing wrong with the word God.
A long time ago the Jewish faith taught that the name of God was too sacred to even speak it . So instead of writting or saying Yaweh they left out the vowels and came up with YWH for the name of God.

its a jewish practice, occasionally copied by non-jews, done to avoid desecrating a name of G-d.
the four-letter name is the only one not allowed to be said outside the temple. anything else is fine but when something is written down it can be destroyed. therefore jews spell it somewhat incorrectly in order to make sure a future person does not accidentally destroy it (ie throw it into the trash) not realizing the name of G-d is written there. that is why on many jewish web pages where a name of G-d is written properly, there is often a disclaimer at the top or bottom of the page warning people to treat the document with care because it contains a name of G-d.

Well I have not seen this, and using the word God, is NOT blasphemous, Their are a few idiots out there who try anything to wind others up, it don't on me though
