put them in a bowl and microwave until they are soft. Then you can continue to either mash them though they will be a bit lumpy. A better idea is to add some bacon, cheese and sour cream maybe a little green onion or chive.
OR
you can put them back into water and continue cooking and make homemade potato soup. Just add some celery and onion with a can of chicken broth salt and pepper.

Microwaving them until they're soft is about the best way to assure that they'll be edible. If you have a food processor or a food mill, run them through that after you finish cooking them in the micro.
Then add your milk and butter, and repeat the process. You should end up with smooth, delicious mashed potatoes.

I would first microwave them in a glass bowl with a little milk. Not too long and cover the top so they don't burn. Then add a little more milk, a little butter, and use an electric mixer to whip them to a smooth consistancy. Don't fret. Stuff happens.
