Everyone loves this recipe!
* oil for deep frying
* 1/4 cup butter
* 1/4 cup hot sauce
* 1 dash ground black pepper
* 1 dash garlic powder
* 1/2 cup all-purpose flour
* 1/4 teaspoon paprika
* 1/4 teaspoon cayenne pepper
* 1/4 teaspoon salt
* 10 chicken wings
1. Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
2. In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
3. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

Where I'm from, it's just 1/2 ranch salad dressing and 1/2 hot sauce. I personally like Frank's Red Hot and they make an extra hot version. For added heat, toss in 1 tps. ground chili peppers per 1 cup of sauce. Just toss your wings in flour, deep fry, and coat in the sauce once you have taken them out of the fryer and let the oil drip off. Easy as can be!! Enjoy!!

Taste like takeout
INGREDIENTS
24 chicken wings
2 quarts vegetable oil for deep frying
4 tablespoons butter
1 tablespoon distilled white vinegar
5 tablespoons Extra Spicy Red Hot sauce
salt and pepper to taste
DIRECTIONS
In a large skillet or deep fryer, deep fry chicken wings in oil until done, about 10 minutes. Remove chicken and oil from skillet/fryer, drain oil and reserve chicken.
Melt butter/margarine in skillet, then add vinegar and hot sauce. Season with salt and pepper to taste. Stir all together. Add cooked chicken to sauce and stir over low heat to coat. The longer the wings simmer in the sauce, the hotter they will be. Serve warm.

1. Bread the wingettes / drumettes. (Hooters Breading is good)
2. Let them stand 30 minutes
3. Deep fry them ( Usually 6 - 8 wings at a time)
4. Put them on a cooling rack, repeat steps 1 - 3 for more batches.
5. Once you have your wings fried, place in large deep bowl / container that you have a lid for. At this point you are going to add your sauce / seasonings. You can make it as hot as you want.
6. Pour your hot sauce over the wings, put the lid on and shake / toss.
You may want to experiment with small batches to find your desired level of heat.
Good Luck!!!

Buffalo Wings:
Prep: 35 min.; Bake: 1 hr., 5 min. You can bake both pans of wings at the same time. Just switch rack levels and turn pans halfway through the baking times. To make the wings spicier, add more hot sauce here or at the table.
6 pounds chicken wings*
4 (0.7-ounce) envelopes Italian salad dressing mix, divided
1 cup butter, melted
1 to 1 1/2 cups hot sauce
1/4 cup lemon juice
1 teaspoon dried basil
Ranch dressing
Cut off wingtips, and discard; cut chicken wings in half at joint, if desired. Place 1 package Italian salad dressing mix in a large zip-top plastic bag; add half of wings, and shake to coat. Arrange coated wings in a single layer on a lightly greased rack in an aluminum foil-lined 15- x 10-inch jelly-roll pan. Repeat procedure with 1 package Italian salad dressing mix, remaining half of wings, and another jelly-roll pan.
Bake at 425° for 35 minutes or until browned. Remove pans from oven, and reduce heat to 350°.
Stir together remaining 2 packages Italian salad dressing mix, butter, and next 3 ingredients in a large bowl; add wings, and toss until evenly coated. Return wings to racks in pans, and bake at 350° for 30 more minutes. Serve with Ranch dressing.
*2 (3-pound) packages frozen party-style chicken wings, thawed, may be substituted.
Yield: Makes 10 to 12 appetizer servings
