You can use any pancake or muffin recipe to make pastries without the paper liners. Just make sure to properly grease AND flour your pans for easy removal. Crisco works great for this purpose. Use your hands or a piece of clean paper towel to pick up some Crisco and wipe it onto the pan's surface making sure you are covering the surface evenly with a layer of Crisco. Then, sprinkle the pan with flour making sure you cover the whole surface with flour and shake off remaining flour.

Lining your pans makes clean-up such a breeze, but when you don't have the liners, this will work well. I also find that recipes that contain more oil are easier to remove than those that have very little oil in it.

Have fun!

Cupcakes are like muffins in that, they bake in the same kind of pan. The only diffrences are how they're made and some times how long they bake.the temperature for baking, too. If you want to bake them with out the papers ( I know they tend to stick to the papers) spray the cups of the pan, or grease them however you choose to, long as you don't use anything lethal. Let me know how they turn out- although I think I can gurantee you, they'll turn out just fine!

all cupcakes can be baked without liners. You just have to grease the pan really, really well or they'll stick. They aren't easy to get out and they make a mess without the cups. I'd suggest getting a silicone cupcake tray or lots of grease and flour.

years before paper liners there was lard, or butter, or cooking oil, or pam. Just coat the inside of the cupcake pan before pouring in the batter.

You could grease the non stick pans and dust the inside with a little flour and that should prevent the cupcakes from sticking.

Another cute idea is to use ice cream cones.
They look great with frosting, keeps the cake contained and there is no trash left over.
