I like the top hat idea. You could turn them upside down on each table. I also bet you could also find pink and white backed playing cards. Take out the Queen of Hearts and one of the black kings have them inlarged to 8 or 9 inches and put them inside the hats You could make a center piece out of teacups. There is always a large pocket watch. If you didn't want to use that much of an Alice in Wonderland theme, you can make beautiful center peices from Christmas ornaments. I have even seen black ornaments. You could have miniatures cakes and pasties at each table. And may I suggest a band my friend used. It was the best reception ever. Right ON Band. I think it would be awesome if you had some "mini" ice sculptures placed around on either the head table or guest book table. Since you're going with the "Mad Hatter" theme, you could also buy some top hats and place a couple at each table for the guys, and maybe a few fake pills, large and small ones for the gals (could make them out of little round cardboard boxes from the craft store, you could paint one size white and the other size pink), you could even write on them whatever you wish and fill with pink and white M&M's... this would carry out your theme and have your colors, Black (hats) White and Pink (pill boxes)and candy. Do a winter theme- snowmen, penguins, icicles... maybe use all the colors as candles in the middle of each table, to make a 'fireplace' like centerpiece. You can use white glitter to jazz up tablecloths and such.
If you're using the mad hatter from Alice In Wonderland, why not do table pieces using platters of cookies? You can dye the cookie dough to be red, pink, black, and white and have little cookie boxes for each table. You could even write 'Eat Me', 'Big', 'Small', etc.

How about making cenerpieces with stacked hat boxes and you could adhere them together with hot glue or a skewer and top off each group with a large bow with 2 or 4 cascading ribbons going down the side. There are so many cool hat boxes in the colors you mentioned. you could have some tables with black & white boxes with pink bows and the rest in red boxes with black bows.

Your theme could be centered around the tea party that was in Alice in Wonderland. As favors you can give away tea cups with your names and date on them. You can use the winter as your theme have your favors wrapped in gifts under miniature trees on the tables this could be your centerpiece candles always add a warm glow. You can also buy cylinders and fill them with some sort of crystals and candles.

I am going to mention poinsettias, even though you say no flowers. But they are funky, and come in red, pink, and white. You could put them in black pots.

Snowflakes are always a cute idea. You can use them on everything. Also snowmen would be cute as centerpieces. As a favour you could make up a hot choc mix, don't forget the marshmallows.
