It means that neither who you were, nor who you want to be is what defines your life. Your life is defined by all the little things you do and experience every day, on the way from where you were to where you are going. The dance of life, meaning the things that really come to matter in life and define who you are, takes place in the steps you take every day, as well as in how you respond to the things you never plan for along the way. That is what makes it a dance... it isn't just your life, but your life as it revolves around and intertwines with the life around you. She is saying that it is this journey that is your life, and not the origin or the goal. Your goals can influence the direction of your life, but it is the steps you take towards them that actually become your life, and may not at all be what you expected... hence the dance.

I believe that this means that everytime you change, accomplish something new, get new ideas, and even fail you are evolving as a person and the space between the "old" you and the "new" you is what really makes your life for we are always changing and that space is trully the climax of your life for we live to change and when we finally stop changing the cllimax starts declining until th "dance" is finally over.

Personally, it means that life is continuously changing, and that's just what it's about. We should accept that we cannot keep things the way they always were (that would make it living ina fantasy, not REAL life). It is, after all, what keeps life intersting.
