The way I cook it is this.
Popcorn venison:
cut the venison into tiny pieces, and marinate. You can use different forms of marinade. Coke helps break down the meat and make it REALLY tender. Beer is a good marinade and can add subtle flavor.
Marinate for a day prior to cooking.
Use a milk-egg bath, then dip it in SEASONED floor. Pepper/Salt or Season All, whichever you prefer.
Re-dip it in milk-egg bath, then back in the flour (for a thicker coating).
Place gently into a hot skillet, and remove when they are a tannish brown color. They do not take long to cook.
Makes excellent finger-food. People can't keep their hands out of it!
You can also use the same way of cooking for making chicken-fried steaks.

Is it steak, roast, burger, loin? Roasts in the oven with vegetables like potatoes, carrots, celery and onion are great.....try putting a couple slices in the roast and stuff some garlic cloves inside. Do not over cook it. It will taste like shoeleather. Low heat--325.
Cover tightly and let it cook for 2 or 3 hours, depending on the size , when the timer has about an hour left, put the potatoes in; put the other vegetables in when you start to cook it.

cut meat into bite size pieces and soak in milk for 24 hours in the fridge. when ready to cook drain meat and brown in a dutch oven with some yellow onions, green bell peppers and chopped garlic. once seared, add 2 cans of beef broth and enough water to cover, one large can of tomatoes, some cut up potatoes and carrots, corn, and anything else you want in your stew. season everything with salt and pepper, oregano, garlic powder, 2-3 bay leaves, any kind of seasoning blend you want to throw in, such as greek or cajun, or emeril's essence, some worcestershire sauce, half cup of red wine, let this simmer slowly for at least 2-3 hours until everything is cooked down a bt and veggies are done. serve with hot cornbread and rice.

Use Venison just as you would beef. Marinate to lessen gamey flavor. Just marinating in milk will lessen the gamey taste. Venison makes great chili.

we've always just used butter and salt and pepper to fry them up on stovetop. could use standard salts too, like lawry's season salt and garlic salt. it still tastes wild, but it's venison, it's going to taste wild but the bonus thing is that this meat doesn't taste horribly like wild game meat
