Layered Fruit Salad

2 C Fresh peach slices OR
16 Oz Can sliced peaches,
- drained
2 C Fresh blueberries
2 C Fresh strawberry slices
2 C Fresh green grapes
2 Tb Lemon juice
1 T Grated lemon rind
8 Oz Cream cheese -- softened
1 C Whipping cream
1/4 C Powdered sugar
1/2 C Walnuts -- chopped
In a large glass bowl layer fruit in order given. In a separate bowl
mix cream cheese, lemon juice and lemon rind. In another bowl whip
cream just until peaks form; add powdered sugar and whip to stiff
peaks. Fold cream cheese mixture and whipped cream mixture together.
Spread over fruit and sprinkle with walnuts. Serve immediately or
store, covered, in refrigerator.

Fresh Fruit Breakfast
Ingredients
1 banana
1 apple
1 peach (or 1/4 tin)
other fruits that are in season
lemon juice
sugar (optional)
Peel and core the apple and cut into chunks. Peel the banana and cut into similar sized pieces. Cut up the peaches (or used tinned if they aren't in season) and other fruits and peel if necessary. Place into a bowl.
To stop the fruit from browning as you prepare it, either drop the pieces into a bowl of water with some drops of lemon juice in it, or make a sugar syrup (by boiling water with sugar in) and cover it in that.
Use a nice variety of fruits with different colours and textures. I would suggest banana for softness, apple for crunch, grapes for sweetness and colour and then anything else that is in season. Strawberries and raspberries add great colour, as do blueberries and blackberries. Pears and plums can add a contrast in texture as well as sweetness.
Sprinkle with sugar and is delicious with some vegan cream or yoghurt.

2 c. chunk pineapple
2 c. water melon balls
2 c. peaches, peeled & sliced
2 c. sliced strawberries
1 c. seedless white grapes
1 fresh pear, peeled & sliced
2 bananas, peeled & sliced
2 oranges, peeled & sliced
Lemon juice
Combine all fruits sprinkling lemon juice over fruit as each is prepared. Chill fruits in tight container.

You can make a good for you dressing for fruit salad with yogurt and honey. Add a littlelemon juice if you wish. I have used vanilla or fruited.

Hi, well you can dice up any fruit like apples, mandarins, grapes, kiwi, strawberries,it is colorful too, then try yogurt to top it off, yummy Good Luck! Amy

my favorite is to use any fruit cut into bite sized pieces with
undiluted frozen orange juice concentrate for a dressing.
nothing else. no added sugars. no oils or fats. nothing
but fruit.

cut apple,banana,strawberry,pineapple (or any fruit you have)into small cubes,squeeze orange and add few fresh mint leaves.keep in refrigerator for 1 hour.no sugar.
