For cookies that have gotten too hard after baking them, we seal them in a large zip lock with a couple of slices of bread, the cookies get softer and the bread hardens up. The idea is the cookies absorb the moisture from the slices of bread.
You could also zap the cookies in the microwave for a few seconds. Sometimes that works for us if we don't want to wait for the bread to soften them.
For future batches of cookies, we substitute 1/2 cup of applesauce for 1/2 cup of the sugar called for in the recipe. (The applesauce does not change the flavor of the cookie, but it does make the cookies come out a little more "soft and chewy" style) and they tend to stay softer longer and not get all hard and crumbly as some cookies do after a couple of days.

Peanut Butter Cookies Recipe Ingredients * 1/2 cup sugar * 1/2 cup packed brown sugar * 1/2 cup butter, room temperature * 1/2 cup peanut butter * 1 egg * 1 1/4 cup flour * 3/4 teaspoon baking soda * 1/2 teaspoon baking powder * 1/4 teaspoon salt Method 1 Cream the butter for 2 minutes. Add the sugars, cream for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir into the sugar butter mixture. 2 Wrap dough in plastic and refrigerate at least 3 hours. 3 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely. Makes about 2 dozen cookies. For chewier cookies, bake at 300°F for 15 minutes.

For cakes, or any baked goodies, our family always takes them out a few minutes earlier than the recipe calls.....Like if you stuck a toothpick in the cake, a few minuter before, and a bit of cake comes on the toothpick, but its not watery....take it out....Same with the cookies, I've never done the toothpick thing with cookies, but just took them out 3-4 minutes earlier than the time on the recipe calls for......There much more moist, and not so hard, especially peanut butter cookies!! It is hard to undo the crispness because that was due to baking time and they are crisp because they were overdone.
So=for next time, keep an eye on them and remove after exactly 10 minutes , or it depends on how large your batch of cookies are.

The next time you bake them, underbake by a minute or two, and play with the timing until you find a consistency you like. Also, once you put the cookies in a bag, their moisture will be collected in the air and it'll be reabsorbed if you leave them for a couple days.

You can try to put them in a closed container with an apple slice or two - I've heard this will soften things up. They sound good to me either way!

try poppin them in the microwave for a couple seconds. like ten seconds or so. they will be softer and warm. yummy

My mom always used to put piece of bread in the container so they could absorb the moisture from it.

I like them crispy...send them to me LOL
Seriously,anytime I have a problem with cookies, sometimes it
works and others it doesnot....steam them.....while boiling water
place the cookes on top for a while.....steam them...hope it works
