Simple syrup is called that because it's so simple! You use equal parts of sugar and water -- it doesn't matter how much, so for your corn-syrup substitution use 3 cups of each, but you can make a batch as small as 1/4 cup each of sugar and water. Put them together in a saucepan, and heat them on LOW heat just until the sugar dissolves. Stirring can help the sugar dissolve faster (and not stick to the pan, especially when you're making a batch bigger than 1 cup) but you don't need to stir it constantly so long as you keep the heat low. Once the sugar is all dissolved, it's done! For most applications, you should let it cool down to at least room temperature before using it. Once you make simple syrup, you can keep it in the fridge for a few weeks (maybe longer, I always use mine up by then). You don't need to boil simple syrup, and when you need a specific amount you definitely shouldn't let it boil because then some of the liquid evaporates, leaving you with less than 3 cups. Great idea replacing that yucky corn syrup! You can also use unrefined cane sugar to make simple syrup, which is what I do nowadays, and which is even better for you and the earth. One other thing -- depending on the recipe you're making, the consistency of the syrup might be important? If you think that might be the case, instead of making just 3 cups of simple syrup, make 4 1/2 to 6 cups and reduce the syrup down by turning the heat up enough to bring the syrup to a simmer (medium should do). Again, don't let it come to a vigorous boil, especially while reducing it, as it may turn into something other than syrup if you heat it too hard.

it will keep for a couple of weeks. don't worry about it though, as it's easy to make: 1 part sugar to 1 part water, heat to dissolve. let cool. voila! = simple syrup.

Forever. We've had gallons of it sitting on the shelf in our kitchen for months. Just make sure that you don't introduce bacteria by licking your fingers and putting them back in the mix :)
