These aren't all traditional, but all have a patriotic theme or flavor.
As to projects, how about handing out a single Congressional Medal of Honor winner to each student and asking them to write a short report on what that person did to win the medal and who they were?
Or, you could ask them to write a report on the backers of the anti-war movement, such as International ANSWER - a chance for some good investigative digging that gets into the roots of our right to protest as well as how that can be manipulated by outside interests.
Or, you could ask them to pick one of our founding fathers (such as Franklin, Jefferson, Madison, Paine, etc) and write a brief report on that person's history, their involvement in the revolution and their motivation for it.
Perhaps you could ask them to examine the history of the USO.
Pick any conflict the US has been involved in - Investigate it. Was it 'just'? What was the popular opinion of that conflict? How was it presented in the media of the time? Compare that conflict to one any other nation on Earth was involved in at the same time.
Write a report on the history of any branch of the United States Military or Coast Guard.
Hope these help spark some ideas!

the first two have great ideas.
the third person need to grow up.
Anyhow, i really cant add to the list musically
but you could put together hand outs with photographs from previous wars (there may be some copy right issues so check before you use) but famous shots like the flag over Iwo Jima, pictures of women building war material in ww2 etc...
Do something on the Revolution, perhaps. The brave men and women who fought and died facing their own country men to create a new and free country maybe include something about Molly Pitcher (Mary Hays McCauly) A woman who helped wounded Colonial troops the the Battle of Monmouth, but after her husband was wounded while manning a cannon she took his place and helped man the gun trough the rest of the battle.
heck how about getting students to sign a US flag and send it to the troops and ask if they would do the same and send it to your school?
just some ideas.

My daugther's high school made the greatest T-shirts as a patriotic fundraiser and then sent some Tshirts to family members of service men and women and our troops as well. A few students ( although as many as you can get would work too) painted thier left hand like this: The tumb and thumb pad blue and thier fingers and palm of thier hand red and white. They then pressed thier wet painted hand onto a white Tshirt. After they dried, white painted stars where then neatly painted on and this gave the shirt and nice clean and finished look. Afterwards, sayings of the kids choice was painted on the back if it was lengthy and if a short saying was used it was placed on the front either above or just below the handpainted flag. For example, my daughter painted under her flag on the front "God Bless America" and on the back of her shirt she painted:
"Land that I love.
Stand beside her, and guide her
Thru the night with a light from above.
From the mountains, to the prairies,
To the oceans, white with foam
God bless America, My home sweet home. "
Just over the back painted saying was painted in large letters "Support Our Troops". The Tshirts were, and still are very popular and the high school raised a great deal of money to buy body armor for the troops and used money to make and send care packages.

the only other song I can think of that hasn't been mentioned so far, is TAPS, its done on bagpipes, or Do you remember & I just got back from a war, by darryl Worley.
I am sure I will think of more later, sorry.
As far as project ideas...... adopt a soldier, buttons, pins, t shirts. You can make those magnetic ribbons that people put on the back of their car on your home printer. Are you trying to do fundraisers or just projects? If you are just wanting craft type ideas, just do a search for patriotic craft ideas, you will get a lot of tips there. Good luck

Feel free to question Clyburn's patriotism, but don't you dare question mine. It is nice to know that some people can judge half of the population on the actions/words of one misguided individual. Can we assume that because Gulianni is pro-choice that all Republicans are pro-choice? Or that because Foley is gay that all Republicans are gay? Must be nice to live in a world with no shades of grey. Good news in Iraq is good news for everyone (except maybe Clyburn), especially the troops. I would rejoice if I heard that no US soldier or innocent civilian died in Iraq today. I would be happy to hear that 50,000 Iraqis didn't flee the sectarian violence last month. I would smile if I heard that Bagdad had a stable infrastructure, like they did before the war. Victory is good news. We need to define what victory means, though, and at what cost...
