pick up trash on the highway or some local park, work at a homeless shelter or soup kitchen, clean/paint public housing halls...........stuff like that

Anything that is within your health parameters! If you are disabled, then I doubt they will send you out onto a freeway to pick up trash! You might get a clerks job, filing papers or answering telephones in a government office. In Los Angeles, many people paint over grafitti or work on the freeways cutting back the shrubbery & loading it onto a truck. Most of the shelters & soupkitchens gladly accept community service workers & you should speak to the shelter managers to get on their list & then tell the judge where you would like to do your service at. There is quite a bit of paperwork involved & not all agencies are allowed to sign for community service workers. So, don't work if the facility isn't approved by the court, cuz it won't count & you'll just be a vounteer until the facility turns in their paperwork!

Anything the adult probation people decide they want you to do.

I used to work for a state park, and they would come out there to do community service all the time. It was usually on the weekend before they had to have it completed. Basically, they got to clean the bathrooms all weekend. I had one lady refuse, saying she wouldn't do that. I just told her to go home then. She said she needed to complete 16 hours before monday. So, I told her it was the bathrooms and her 16 hours, or she could leave and explain it to her PO. I got lucky one weekend, I had three guys, and one of the sewer pumps went out. I don't think I need to go into any detail about what it is like to pull a sewer pump. Luckily, I just got to point and they pulled the pump, cleaned it, and put it back in.

When I worked at the county courthouse, we would have them come once a week, and do the mowing and stuff like that around the courthouse.

And, yes, picking up litter on the side of the road is fairly common as well.

none just go to jail, at least they are the ones who will have to do all the work while you get a mini vacation.
