This is a good time of year to make a big pot of soup. Store the leftovers in inexpensive (disposable) ziplock or glad brand bowls with tight lids. They make an easy to warm up lunch.

Here's a recipe I enjoy:

Zinfandel Minestrone
Serve with French bread

1 pound hot Italian sausage
1 pound mild Italian sausage
1 chopped onion
3 carrots, chopped
1 zucchini, sliced
4 cloves garlic, chopped
3 quarts chicken broth
2 cans diced tomatoes
2 cans cannelloni beans, rinsed and drained
1 tablespoon dried basil
¼ cup Zinfandel
2 cups large shell-shaped pasta
Salt and pepper to taste
1 cup fresh grated parmesan cheese

1. Squeeze sausages from casings into a large pan. Cook until brown and crumbly, approximately 10 minutes. Discard fat.
2. Add carrots, onion, zucchini, and garlic. Cook for about 6 minutes until onions are soft.
3. Add chicken broth, tomatoes, beans, basil, and Zinfandel. Bring to a boil.
4. Add pasta. Reduce heat and simmer, covered, for about 10 minutes until pasta is tender.
5. Add salt and pepper. Serve into bowls and top with parmesan cheese.

This will make 12 servings.

If you want to eat truly healthy, lose body fat consistently, normalize your blood pressure, cholesterol levels, prevent cancer, and even boost your brain health and energy levels, you may have heard all over the news that the Paleo Diet has been found to be one of the best methods of achieving all of these benefits compared to any other popular "fad" diets out there. Go here https://bitly.im/aNDXl

The truth is that the Paleo Diet will never be considered a fad because it's just simply the way that humans evolved to eat over approximately 2 million years. And eating in a similar fashion to our ancestors has been proven time and time again to offer amazing health benefits, including prevention of most diseases of civilization such as cancer, heart disease, alzheimers, and other chronic conditions that are mostly caused by poor diet and lifestyle. One of the biggest misunderstandings about the Paleo Diet is that it's a meat-eating diet, or a super low-carb diet. This is not true

How about grilled chicken strips on pasta with rosee sauce one night? The sauce comes in a packet, really quick & easy.

Then maybe a meat & veggie stir-fry over rice. Just get a package of frozen veggies and some strips of beef or pork. For the sauce, just use soya, crushed garlic, ground ginger and a spoonful of honey. Add some chili flakes if you like it spicy.

Chili one night, that's easy, just serve with grated cheese and fresh bread.

Lasgna or spaghetti with caesar salad.

A small roast (pork or beef) with some roasted carrots and potatoes would be good. Steamed green beans on the side.

Tuna or chicken casserole with rice or noodles. I like to do chicken with rice & broccoli, or tuna with noodles and peas & carrots. Salad on the side.

Hope that helps a bit, you might not like all of them but it shouhld cover at least one or two dinners!!

You can try this:
take some garlic cloves and put into a food processer with a little olive oil and some sweet basil. process the mixture until there is a smooth paste. refrigerate. about 2 hours before serving add 2-3 tomatos that have been diced. serve with a little more olive oil on toast/french bread or other hard type bread. salt/pepper to taste
