He needs to take a lunch every day. It needs to be something that can be eaten cold--no microwave or electricity...he's out in the middle of nowhere! Any ideas?

Thanks to all of you who provided serious answers...I was actually serious in the question. The thermos idea was great and the sandwiches gave me some good ideas too. But since I had to pick a best answer...

It's a good idea to buy plastic containers with tight sealing lids in individual serving sizes for people who bring lunch with them. Even though he can't heat it up, a lot of left-overs from last nights dinner can be good for lunch. Pasta salads, rice and beans, cold meat etc. Just make more food for dinner so there are left-overs for him. Do this a couple times a week. On other nights use standards such as turkey sandwiches, or other cold-cuts. You can use a thermos to pack soup in and it will still be warm by lunch time.
It gets hard to be creative and practical but just keep experimenting and of course, ask him for his desires and ideas.

My husband is an Iron Worker. Local 395. I send him with lunches all the time. And he comes back with some of them. Don't take it personally. Men eat what they want to eat. Sometimes he loves the food I've packed. Other times not. Sometimes they trade with guys. I just don't put that much thought into what is in his cooler anymore. I know he likes his V8 and apple juice. After that, I put in a good sandwich or two, maybe container of left over dinner. And he's on his own after that. He probably doesn't even appreciate the fancy lunches you are making. They are working. Lunch is a break to fuel the body. They don't want or need anything fancy.

The thermos IS a great idea.
If your husband likes chicken salad, there is a fabulous recipe at the first link below.
You can use the chicken salad in sandwiches or as a salad or even as a spread on crackers or bread. That page explains the options.
Also, there is a meat and potato pie called a "Pasty" -not pastie :-)

peanut butter and jelly (or any kind of sandwich) with a couple pieces of fruit. you could use one of those insulated lunch boxes so that if the sandwich has meat or cheese or anything you wouldn't have to worry about it going bad. Fruit is great...filling, low cal, super healthy and won't spoil. Other ideas: cold salads (bean salad, pasta salad). If you have a thermos that can really keep water nice and hot, you could send some dehydrated things...like potato cups or soup cups...good luck!

I like sandwiches.
If he's somewhere cold, you can make tuna salad (I like to add chopped apples to make it a little different), turkey and provolone with mayo.
If he can't refrigerate it, maybe ham and cheese with mustard for dressing.
Fruit is always good, fresh apples, bananas, raisins, dates (stuffed with brie is wonderful!), figs, even little cans of fruit cocktail.
For desert, cookies are always dependable.
If you want something other than a sandwich, is it possible to put hot soup in a thermos?

you can fix him anything as long as you write a little love note and put it inside his lunch box,then he won't care.
p.s. they do have thermal containers for hot food,you can buy them at walmart.
