I'd go for Moules Mariniere
They look impressive, taste good and are quite easy and cheap to make!
A nice chilled bottle of wine will go down nicely with them too :)
Ingredients
1kg/2.2lbs fresh mussels
115g/4oz unsalted butter
1 clove garlic, peeled and finely chopped
2 shallots, peeled and finely chopped 200ml/7fl oz dry white wine
1 bay leaf
large handful fresh flat leaf parsley, chopped
Method
1. Prepare the mussels: Pull away the hair-like strands (beard) around the shell and scrub with a stiff brush under cold running water.
2. Heat 50g/2oz of the unsalted butter in a large saucepan. When hot and foaming add the garlic, shallots, wine and bay leaf. Cook over a medium heat until the shallots are soft and translucent.
3. Bring the shallots and wine mixture to the boil. Add the mussels, cover the saucepan, gently shake the pan and cook over a high heat for 2-3 minutes, until the mussels open. Discard any mussels that remain closed after cooking or are shrivelled.
4. Strain the mussels over a large saucepan using a colander and set aside. Place the mussels into a large bowl. Retain the mussel liquor in the pan and return to the heat. Add the parsley and remaining butter and bring to the boil.
5. Pour the mixture over the mussels and serve immediately with plenty of fresh crusty bread.

Flat, (Breakfast) mushrooms, sprinkled with salt and pepper, stuffed with Ardennes pate, brushed with oil and baked in a moderate oven for 20 minutes. To follow, fillet steak cooked rare with baked potato, with oodles of butter, steamed green beans, grilled tomato and breaded onion rings. Strawberries and cream, or Black Forest Gateau and cream. (If going for the Gateau, I suggest you cheat a little and buy one from your local supermarket!). Cheese and biscuits. The first two courses to be accompanied by a bottle of good red wine, the dessert by a bottle of medium white wine, and the cheese by o bottle of Taylor's Port. Incidentally, the cheese should include not just standard Cheddar, but a selection of Brie, Camembert, Edam, Austrian smoked and a Blue cheese, e.g. Stilton, Dolcelatte or Danish Blue. Finally, a liqueur coffee and cream. If that lot don't get him, nothing will!

maybe a nice steak with a baked potato. Topped with some sour cream and chives, and some Steamed baby carrots. It's not too expensive nor timely, and how can you go wrong serving a man meat and potatoes? LOL He'd enjoy it! And for desert make some chocolate covered strawberries

Make something do-ahead, so you can pay attention to him most of the time. I recommend the following asparagus lasagne, and for desert, the most romantic thing for me is fresh strawberries and whipped cream for dipping.
Asparagus pesto lasagna
1/3 C flour
3 ½ cups low-fat milk, divided
6T pesto, or more to taste
2T parmesan plus additional for garnish
1 tsp salt
¼ tsp pepper
2 tsp olive oil
1 ¼ lb asparagus, tips cut off and reserved, spears trimmed, and chopped into ¼ in pieces
1 clove garlic, minced
16 no-cook lasagna noodles (9 oz)
2 C shredded fontina or part-skim mozzarella cheese (8 oz) divided
1)Prehear oven to 350F. Whisk flour and ½ C milk in saucepan until smooth. Gradually whisk in remaining milk. Bring to boil over medium heat, whisking constantly, and boil 1 minute, or until thickened. Remove from heat and stir in pesto, parmesan, salt and pepper. Reserve 1 C white sauce.
2)Warm oil in pan and sauté chopped asparagus (not tips) and cook, stirring often, 5 minutes, or until tender. Add garlic and cook, stirring, 1 minute. Season to taste with salt and pepper. Remove from heat.
3)Coat 13x9 inch baking dish with cooking spray. Place layer of noodles in dish, overlapping slightly. Layer with half of cooked asparagus, ¾ C fontina, and half of sauce. Add another layer of pasta, remaining sauce, remaining asparagus and ¾ C Fontina. Top with layer of noodles, reserved 1 C white sauce. Arrange reserve asparagus tips over top and sprinkle with remaining fontina.
4)Bake, oncovered, 35 to 40 minutes or until golden. Let stand 10 minutes. Serve with additional grated parmesan cheese, if desired.
